  • cheese what are your favorites?

It is my favorite topic in food besides curry!...what is your absolute favorite cheese? I just saw a cheese I have never tried on the Induction forum....my favorites is ...oh Lord now I have to think ...and narrow it down...ok maybe in catagories...please share yours I am selfishly hoping to find cheeses to try over the holidays!!!!

    fresh soft:
would be a good chèvre plain unfettered by herbs or pepper

    for melting:
    scamorze

    for fondue:
    Gruyere

a harder cheese just eating daily:
a good sharp cheddar (Tillamook is my favorite)

    for grating:
of course a really good aged Parmigiano-Reggiano

    I like:

Hot Pepper Jack- for mexican and just about everything else This is probably my favorite right now.

    Queso Blanco- for fried cheese

Shredded Parmesan/ Asiago- for cheese crisps

White American and Baby Swiss- for roll ups

Tillamook Cheddar- to go with pepperoni

    Nothing too fancy...

      I love a good sharp goat-cheddar.

Chevre is also good, but I prefer the herb encrusted variety.

Mancego, Parmesan, and Romano are all great straight from the block.

Triple Cream Brie and Camembert are quite tasty, and once you get past the smell Morbier is wonderful.

Stilton and Gorgonzola are great for making nice strong blue cheese dressings.

Edam, Gruyere, Swiss, all great for melting and snacking. Really, I love any kind of cheese.

        In no particular order:

Stilton: I like it plain or with a bit of fruit and nuts. The texture and flavor is too nice to have it mixed with anything stronger

Brie: yummy, especially when you toss it into the microwave and nuke it for 1 or 2 minutes until it warm and alittle melty.

Chevre: ike nurselady, I like my chevre plain OR I like to cut it into patties and roll it in crushed nuts and bake until the nuts are toasted. When I hit maintenance, I'll prepare it the real way with crushed wasabi peas instead.

        Havarti: Creamy, buttery, yummy.

        Jarlsberg: Good in roll-ups

        Mozzarella: gotta love this

Munster: Another good melty cheese---especially in an omelette or as the filling in a low carb grilled cheese sandwich or Croque Madame or Monsieur.

Cheshire: Another English cheese that I love.

Parmigiano Reggiano: Only the real stuff. Delicious!

Pepper jack: good melty cheese I use in omelettes or in fauxjitas.

Love smoke gouda, odd too cause I usually hate a "smoked" flavor in foods

I like a Havarti Dill too that they sell at publix

                    Also plain old baby swiss
