  • Eggs, eggs, and more eggs...

    Okay, so I know Atkins isn't just eggs and bacon , but I LOVE eating eggs!

    My favorite way to eat them are scrambled with crumbled sausage, salsa, and a little shredded cheese.

    So everyone tell me, how do you like to eat yours?

    Omlette with spinach and monterey jack cheese topped with sliced avocado.

    Or when I just want some comfort food....scrambled with a little one-carb ketchup.

        I like my eggs in an omelette with a little chedder cheese, a faux bacon made from various soy products (I don't eat meat), and some vegetable or other.

          Both of those sound so good. Have recently discovered Jimmy Dean sausage omelets (4 carbs each) they come two to the pack, microwave for 2 minutes and presto. Like to top it with a mayo and horseradish mix, yum! Anther favorite is the mexican quiche with the green chiles in it.

            I alternate every day between:
            scrambled with peppers, onions, and pepperjack cheese
            Sausage and cheese omelet
            Bacon and cheese omelet

            Yum!

              I'm an omlette person as well. Usually it's just cheese, sausage and cheese or canadian bacon and cheese.

              i also love poached eggs on a flax bun.

              If i'm in the mood for something sweet, baked egg custard makes a great sweet treat.

                    Yum, I LOVE Eggs Benedict! I'm having hard boiled eggs this morning with bacon. I like making hard boiled eggs once a week because they make for a great grab & go snack. I also make scrambled eggs with bacon/ham/sausage, onions, green peppers, tomatos & cheese. It's filling and delicious. I also do fried, deviled, & whatever else works for me that day. I like to vary my eggs quite a bit.

                      I love a poached egg on top of sausage and mushrooms. Or on a spinach salad with bacon.

                        Classic Egg Nog

                        Ingredients:
                        • 1/2 cup plus 2 Tablespoons Splenda
                        • 2 eggs, separated
                        • 1/4 teaspoon salt
                        • 2 cups heavy cream
                        • 2 cups water
                        • 1 teaspoon vanilla extract
                        • Brandy or rum flavoring to taste
                        • 1 teaspoon eggnog flavored oil (LorAnn or Amish brand) [optional]
                        • 1/2 cup whipping cream, whipped with sweetener of choice
                        • Ground nutmeg and/or mace
                        Beat 1/2 cup Splenda with egg yolks. Add salt, stir in 2 cups cream and 2 cups water. Cook over medium heat, stirring constantly, until mixture coats a spoon. Remove from heat and allow to cool. Beat egg whites until foamy then gradually add remaining Splenda, beating to soft peaks. Add to cooked mixture and blend thoroughly. Add vanilla and flavoring(s). Chill at least 3-4 hours.

                        Pour into punch bowl or cups. Dot with "islands" of whipped cream. Sprinkle with nutmeg and/or mace.

                        Serves 4. 4 grams per serving.

                          Seriously, though, while I do love Egg Nog, I have'nt had any since starting Atkins. Maybe at Christmas, though.


                          I love eggs any way at all. Especially coddled with salt, pepper and butter, (non-Atkin version includes cut up toast mixed in). I like eggs all ways (I think)except raw, straight up, pickled, or balut type. But I'd even go for green eggs and ham...

                            my favorite egg dish on the planet is


                            I made great low carb eggnog this past year but the rum in it made me want to eat cake too so I am not doing that again!!!

                            here is my all time favorite recipe for eggs ...a luxury that is out of season for us right now sadly

                            Hangtown fry
                            1/2 pound thick cut country style or pepper bacon
                            1 doz tiny fresh oysters
                            8 large eggs beaten a bit

                            saute the bacon until fairly crispy drain off most of the fat then add the oysters and pour the scrambled eggos right away on top of the oysters and cook over med heat with a lid on (like a fritatta) for about 10 min then take off the heat and if needed finish for a few min under a broiler ....let sit for a few min while gathering garnishes like diced tomato avocado (of course) and sour cream

                            to die for is all I can say here
