    Megs got me thinking about Kathy Hoshijo she was a brilliant chef on PBS years ago ..I have not seen or heard of her in years but loved her recipes ..there were man that were quite low carb and as I am looking at this book "The Art of Dieting Without Dieting" she gives the nutritional breakdown of all her recipes ..I had forgotten that ..it was pretty ahead of her time for 1986!!!

    anyway she had this recipe I absolutely loved for a veggie burger that was a lot of work to make but froze perfectly so it was worth it ..they tasted so good!!!

    however it is pretty high carb and what I would like to do is modify this recipe ...WITH OUT THE MENTION OF FLAX PLEASE!!!! the soy products I want to leave in but the wheat products I would like to find something to replace them

    here you go Kathy Hoshijo's
    Woth the Trouble Burgers

    5 cups of TVP
    1 cup finely chopped celery
    1 cup finely chopped onions
    2 tsp fresh cracked pepper
    2lbs tempeh
    1/4 cup soy sauce
    1 cup whole wheat flour
    1 cup brewers yeast
    4 cups whole grain bread crumbs
    1 cup walnut meal
    3/4 cup peanut butter
    2 lbs tofu
    oil for deep frying

    soak the tvp in water until it is sofr then mix the rest of the stuff ..except the oil for frying that should be heating to 450 degrees
    form patties out of 1/2 cup of this mixture then deep fry until brown and crispy

    you should have this sauce ready for the hot burgers to go right into

    1 1/2 cups soy sauce
    6 cloves crushed garlic
    minced fresh ginger about 1 tbls
    3 tble vinegar
    2 tble honey
    mix well and put into a baking pan so you can drop the hot burgers from the oil into the sauce

    I spread these on a cookie sheet it comes to 28 burgers and froze them then put them in zippy bags ..when I wanted some I took them out and heated them with a bit of butter on top in the oven

    each burger with this recipe comes out to 25.5 grams of carbs so if you want wheat and use it then they are fine I prefer not to myself since it tends to trigger cravings for me ...and I would just leave the honey out of the sauce ...

    these really are awesome and my skeptical kids loved them loaded with lettuce tomatoes and condiments

      I can tell by looking at the original recipe that it didn't make a super cohesive veggie burger. As far as I can tell, the only thing keeping it together was the gluten in the wheat flour. If you replace the wheat flour with oat, it's going to fall apart.

      Heidi, does vital wheat gluten cause issues for you as well? This recipe needs some form of glue to keep everything together. You could try using eggs as a binder, but I don't think they'll get you very far.

      The easiest approach would probably be omitting the crumbs/wheat flour and adding a cup of vital wheat gluten.

      If you wanted to go the extra mile, you could probably make some gluten/resistant starch bread for the crumbs. Actually that would be an extra few miles

        Scott this burger stuck together like a burger should ...perfectly...I swear!!! it was awesome !!!

        no I had not thought about VWG and think I have some in the pantry begging to be used...I should try it!

        gluten resistant starch bread? you should enlighten me

        Megs I thought about oatflour but oatmeal is one of the things that makes me hungry in an hour sadly because I love the stuff ....
