I have tomatoes growing in my backyard and they're moving into my house at record speed!
Here's a tomato recipe I saw on tv, tried and now I'm hooked!
Grilled Cheese and Tomato Sandwich

I've tried that recipe using different ripeness of tomatoes and different cheeses. All very delicious, though I like the tartness of the under-ripe tomato best.
My mom used to make this for us when I was a kid
Egg baked in tomato:
Per person:
1 tomato
1 egg
1 tablespoon melted butter or cream
salt and pepper to taste
Cut the top off the tomato and scoop out the insides. Chop the insides put into a shallow dish. Set the hollowed tomato into the dish, nestling it in the chopped tomato innards. Break the egg into a small dish and carefully slide it into the tomato shell. Repeat using one egg per tomato. Carefully drizzle the butter or cream on top of each egg. Salt and pepper to taste. Bake at 350 degrees F for 20 minutes.
Variations:
Top with cheese.
Top with crumbled bacon.
Spoon pesto into the tomato shell before adding the egg.
