      Hehehe, I was thinking you were asking him if he used them in "different" ways Oh well...

      My favorite would have to be...hmmm...lots! I love green beans microwaved with cheese! And I am really looking forward to making lots of dishes out of cauliflower!

        Oh, yeah, it's the stuff that what I eat eats. I prefer to get my veggies second hand.

        yeah, second hand veggies....

        Actually, to me, nothing beats an extremely fresh salad.

            I'm seeing mushrooms too! (that's good right?)

            Anyhow, Rich, I tried a really nice recipe for stuffed mushrooms over the weekend. I got it out of Gourmet Magazine.

            Pecan Stuffed Mushrooms
            24 large "stuffing" type mushrooms
            4 oz pecans, finely chopped
            1 garlic clove finely minced
            2 tablespoons butter
            1 tablespoon fresh oregano chopped
            salt to taste
            1 cup heavy cream

            Carefully remove the stems from the mushrooms. Reserve the caps. Finely chop the mushroom stems. Melt the butter in a large pan. Saute the chopped mushroom stems, garlic, and oregano, until the mushroom is slightly browned. Add the pecans. Saute 1 minute. Add 1/3 cup of the heavy cream. Bring to a boil and cook, stirring until the cream is absorbed. Remove from heat and set aside. Add salt to taste.

            Arrange the mushroom caps in a buttered shallow baking dish. Pre-heat oven to 400 degrees F.

            Divide the pecan-stem mixture evenly among the mushroom caps. **Pour the remaining cream over the stuffed mushrooms. Bake for 30 minutes. Serve with the pan juices spooned on top.

            **The mushrooms can be prepared in advance to this point and held in the refrigerator until you are ready to bake them. Bring them to room temperature before baking.

              Another rhubarb girl here...I absolutely love the stuff, i cook it down in a pot and sweeten it...It had never occured to me to roast or bake it! I will have to try that. I usually have it with cottage cheese or yogurt.

              other than that i'm not a big lover of veggies though i do force myself to eat them.

              I want to like mushrooms but i just can't get past the look/texture of them...the only way i can have them is chopped up and part of another recipe..like soup. Maybe i will try that recipe megs..

                    I have felted really burned out on veggies the last couple of months. I used to love them. Recently only a few have been edible to me..
                    -roasted cauliflower like Barbe makes. I eat the entire head all by myself in 2 sittings. Usually with nothing else.
                    -roasted bell pepper with meat sauce.
                    -creamed spinach

                    That pecan stuffed mushroom recipe sounds awesome. It's the kind of recipe I was looking for in the nuts thread. Care if I cut and paste it, Megs?

                      Fresh from the garden green beans wrapped in bacon, drizzled with evoo with cracked pepper and sea salt grilled is my favorite veggie. Fresh asparagus if great prepared this way too.

                        Cut and paste away....just be sure to include the credit to Gourmet magazine, because it's one of the many naturally low-carb friendly recipes in that issue.

                        I'm tinkering with the idea of using portabello mushroom caps so it would be more like a side dish than an appetizer thing. Of course, I'd still have to use the regular mushrooms because portabellos typically don't have enough stem to use a 50% of the stuffing mixture.

                        I can also see using that stuffing mixture for stuffing chicken or turkey cutlets or even pork chops or pork loin roasts!

                            Here's a thought for y'all (Kentucky lingo, since I live here, might as well try to talk like these people).

                            I love to marinate. I like balsalmic vinegar, olive oil, and garlic as a basic marinade for portabellas and asparagus. Then I like to grill the veggies. Smoked gouda is nice on the mushroom caps, so is chorizo sausage mixed with some cheddar and then bake the stuffed caps.

                            then I feed them to a cow and eat the cow.

                            mmmm, delicious.
