  • Who's brave around here?

    Okay, 2Big's pinto bean pie AKA mock pecan pie got me researching....

    Who's brave enough to try this recipe?

    It looks like you can low carb it by using the Splenda-sweetened pickles and subbing the sugar for a low carb sweetener. The cornstarch looks redundant due to the number of eggs in the recipe, but it can be subbed with a low carb thickener like guar gum.

    So....who's willing to step up to the plate?

    I've had vinegar pie which is alot like lemon merangie but splenda sweetened stuff is out for me.

      I think it might be good if for the sweet pickles, melon rind were used rater than cukes. I'm not sure what to use for pie crusts, though.

      My mom used to make watermelon rind pickles that were out of this world!

        that makes me CACK I hated those pickles to begin with!!! Gross... ....but I will try it for the helll of it next week when I get back from this conference...

              I'd take a bite if offered. I wouldn't spend money on making it to try it. I enjoyed the vegetable pickle spread I tried in England a few years ago.
