    Hi everyone, my bf ( 9/2 birthday is comingup and i need to find alternative ingredients for the following recipe.

    Dbl strawberry white chocolate shortcake
    1 pkg (16 oz ) poundcake mix
    1/2 cu cornmeal
    2 eggs
    1 tsp grated orange zest
    1 cu white chocolate chocolate chips chopped
    1 Tbs all purpse flour
    1 lb trimmed strawberries ( 2cu )
    2 cu heavy cream
    1/4 cu confectioner's sugar
    1/2 cup seedless strawberry jam

    Here is a basic almond pound cake recipe:


    1 cup butter
    1 cup artificial sweetener --
    splenda granular
    5 eggs
    2 cups almond flour
    1 teaspoon baking powder
    1 teaspoon vanilla
    1 teaspoon almond extract
    or divinci carmel syrup
    Cream butter and splenda
    together in a large mixing
    bowl. Add eggs one
    at a time, beating after each
    one. Add flour and baking
    powder a little at a
    time until well blended. Add
    extracts. Bake in a 9 inch
    cake pan.

    It's 47g for the whole recipe i get about 9 pieces out of it. . I like to mix sweeteners, i use liquid sugar twin (cyclamates) and cut back on the splenda to save on carbs.


    Also, I made a cake from linda's site in the summer, with a few tweaks. It came out amazing...the non-low carbers could not tell it was low carb. keep in mind these are NOT induction recipes.

      Go to the 14 Day Induction Forum. One of the sticky posts is called "Induction Recipe Basics". Get the Atkins Revolution Rolls recipe for it.

      Alter the rolls recipe by omitting the onion powder and substituting it with Splenda. To the egg yolk/cream mixture, add 1 teaspoon (vanilla, lemon, etc. if you use almond extract use only 1/2 teaspoon).

      Bake the recipe in a jelly roll pan or a 9 x 13 inch rectangular pan. Cool completely. Carefully trim the sides off the cake. Then slice the cake into 3 sections.

      Layer the heavy cream and strawberries between the cake layers. Then frost the entire cake with the remaining heavy cream. Refrigerate.

        Do you remember the oven temp and timing, Jen?
        Wondering how to get 'most' of your net carbs from your induction veggies?

          ooops sorry didn't realize it wasn't there...I'd bake at about 350 for 45 mins then check with a knife or toothpick and make sure it's done. in my oven 45 mins usually does it.
