  • Thanksgiving

So Canadian Thanksgiving is approaching once again, thought I'd start a thread for favourite thanksgiving recipes. This year I'm not making the dinner (we rotate it), but I will be bringing desert. I'm going to make a real apple pie plus a low carb desert, Getting kinda tired of cheesecakes..does anyone have any really good thanksgiving desert ideas? I know pumpkin pie is easy to low carb..haven't done it myself yet though, so if anyone has a good recipe....

I'll also be bringing one sidedish..I thought this looked really good:

    PUmpkin Casserole

    Ingredients:
    • 6 cups raw cubed pumpkin
    • 1 cup sour cream
    • 1 egg
    • 1 1/2 cups real mayonnaise
    • 1/2 cup heavy cream
    • pepper, onion powder, salt and garlic - to taste
    • 3 green onions sliced
    • 1/2 stick butter
    Preheat oven to 350°F.
Melt butter, add wet ingredients, mix thoroughly. Spray casserole dish with nonstick spray. Mix pumpkin with wet ingredients, pour into dish. Season and place green onions on top. Bake covered with foil 45 minutes. Uncover and bake 15 minutes more.

    Re: Thanksgiving

I'd be interested in a pumpkin pie recipe too. I make a mock danish type thing with pumpkin, but it's not quite the same (although it was yummy for breakfast this morning). I found some chayote squash last week and I made the "fried apples" and put some whipped cream on them. Mmmmmmm....just like apple pie.

        Re: Thanksgiving

Oh yeah, I remember Canadian Thanksgiving is about a month before American Thanksgiving......Yikes!!!!

For T-Day, I usually bring a dish of faux mashed sweet potatoes and some kind of low carb dessert to the family potluck. However, this year, I might bring pumpkin soup and maybe a low carb blueberry fool (no, this isn't a nickname for my brother-in-law!) I bought alot of blueberries and frozen them when they were in season. A fool is basically a whipped heavy cream with a fruit puree folded in to it.

But there's typically lots of good low carb food to eat on T-Day...roast turkey, ham (depending on the ham), salads, veggies....

Speaking of pecan pie, I'll have to look and see if I still have that copy of the now-defunct Low CArb Living magazine. They had a recipe for pecan pie, using an egg custard base, sweetened with the Atkins pancake syrup (which isn't made anymore, I think).

            Megs,

Would there be a way to use a DaVinci syrup with some kind of thickener to replace the Atkins thing?

              Re: Thanksgiving

You probably could replace the Atkins pancake syrup with DAvinci. But you wouldn't need to add thickener. The syrup was just used for sweetness and to add a caramel/brown sugar flavor to the pecan pie. The eggs in the recipe did the thickening.

I'll look around for the magazine. I think I saved them.....

there are several low carb pancake syrups still on the shevles you could use.

I buy Carey's s/f syrup which is FAR better than the atkin's syrup was. It's thick and has the same consistency as regular syrup. I just checked the label and it's made in the US so it's probably available there.

2Big jeez I can't believe I didn't think of the mock pecan pie! I think I may have to make that!

                      Re: Thanksgiving

I know you only asked for a pecan pie recipe, but here are a few i came accross that could be low carbed in case anyone else is looking for ideas(including a pecan custard tart):

I made the martha stewart pumpkin pie from this site for our thanksgiving in October, subbing sweetener for the sugar, and using a ground nut crust and it was faboulous! Pumpkin Pie i believe can also be made without a crust in a buttered pie plate (please excuse the mess of the table..it was after 15 ppl had dinner, wine spilled etc LOL):

sorry tried to resize without much luck.

                      http://joyofbaking.com/pumpkinpie.html

I also made the mini cheesecakes from this site, i modified and made 3 different flavours, pumpkin (adding canned pumpkin), chocolate (melted unsw. chocolate) and plain.

They have a recipe for a pecan custard tart, similar to a pie, that would be easily low carbed as well, and i'm quite sure would cook crustless without issue.
