Hi, I have looked all over for a safe dressing, becuase that is my favduring the hoidays, can anyone help me with a recipe, ive looked and looked but cant seem to find one... thanks

Some people make a pork rind stuffing (pork rinds substitute for the bread). I'm not too crazy about that recipe.
This year I'll either do a cauliflower fried rice thing or my low carb spoonbread recipe like I did last year.~Megs~

More of a warning--I tried the pork rind stuffing and it was the most god awful stuff I ever tried to eat! I agree with MoG. The pork rind stuffing is nasty---don't waste your time or money on it.
My spoonbread recipe is made from pork rinds but it doesn't have that yucky taste like that pork rind stuffing. Click the link in my siggy. It's in my recipe section.

Here is the stuffing George Stella made yesterday on his Low Carb & Lovin' It cooking show:
3/4 pound turkey sausage (you may use pork breakfast sausage)
1/4 cup finely chopped celery
1/4 cup chopped red onion
2 eggs
2 cups coarsely chopped cauliflower
1/2 cup diced yellow squash
1/2 cup grated Parmesan
1 tablespoon chopped parsley leaves
3 tablespoons chopped fresh sage leaves
3 tablespoons chopped fresh thyme leaves
1 tablespoon minced garlic
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
Equipment: 8 by 8-inch square baking dish
Preheat oven to 350 degrees F.
Remove sausage from casing and crumble it into a pan over medium heat. Add the celery and onion and cook, stirring, until browned. Drain fat if necessary.
Beat the eggs in a bowl. Using a spoon, mix in the sausage mixture and all the remaining ingredients. Pour the stuffing into the baking dish and bake until hot and browned, about 30 minutes. Serve immediately.
It looked really good!

I am going to try that george stella recipe this year. I made one from Atkins.com last year that involved the Atkins LC Rye Bread and sage sausage, and while it wasn't bad, it wasn't worth the relatively high carbs of the LC bread either.
There are so many sides at Thanksgiving that are more worth the carbs for me, so I am going to try this breadless one and see how it goes.

I will report back how it goes. I will likely play with the recipe some, but I will try to keep it mostly intact. Already I knowI will be using real pork sausage instead of turkey sausage (Blech) and probably add a couple extra veggies.

I am making the old standby sage sausage stuffing with flax bread nuked a bit longer than normal to dry it out...
SAGE SAUSAGE HOLIDAY DRESSING
1 package Jimmy Dean Sage Sausage -- (16 oz)
3x Flax bread recipe
1/2 teaspoon Poultry Seasoning
1 cup Chicken Broth
2 Eggs -- beaten
1 cup Onions -- chopped
1 cup Celery -- chopped
1/3 cup Butter -- melted
Combine flax bread crumbs, seasoning, broth, and eggs in bowl.
Saute onion and celery in butter in skillet. Add Jimmy Dean Sage Sausage and brown. Drain.
Add sausage mixture to bowl, stirring well.
Spoon into lightly greased 2-quart baking dish. Cover and bake at 325F for 20 minutes.Kent - 35-M-6'4"

I'm going to make a stuffing using a loaf of Low Carb Orowheat Multi-Grain bread. I figure that I'll put some pork sausages, green apple, celery and onions (and of course, eggs & chicken broth) in it... but anything else will be potluck. I guess it won't need much more other then some herbs & spices. I expect it to be higher carb then standard Atkins stuff... but atleast it won't be "full-carb" and it will have some nutritional value to it.
