  • dinner thread!

    come on it has been ages since Mogs has started one and I could not wait any longer ..inspire me for the week please ..tonight I am making chile Colorado, roasted squash and jicama salad (grated jicama lime juice, chile and cilantro ice cold) ....chile and squash are the best matches in the world!!!

    what are you guys doing? the pressure is on be creative

    Oh no!! I get enough pressure during the day. lol I'm trying a new recipe. It's called Red Snapper con queso. Broil the fish and then put a mixture of grated cheddar, dijon mustard, horseradish and chili sauce (I'll have to improvise something there) and broil for another minute or so until melted.

    We've been craving fish and we bought all different kinds on the weekend so I thought I'd try something new. We'll probably just have salad with it.

      I bought a kabocha squash. So he's in the oven roasting right now. Also in the oven are a couple of turkey legs. So tonight will be the squash, turkey legs and sauteed broccoli. Not very gourmet but it's a weeknight....

            I made chicken chow mein for the family. After checking the ingredients I discovered it's all stuff I can have! Whoo hoo. I ate mine with mashed cauliflower as the rice. I felt like part of the family.

            Chicken broth
            celery
            onion
            grated ginger
            soy sauce
            red pepper flakes
            sesame oil
            bamboo shoots
            bean sprouts
            water chestnuts
            canned chicken (white meat)

            MMMM, was good!

              we had chicken tenderloins fried up with parmesan and some spices for seasoning. i am definitely not the best cook in the world, but it tasted like good comfort food add some low carb BBQ sauce and a salad...that's dinner!

                last night I had a salad (lettuce, cucumber, onion, ranch dressing) and some kielbasa.


                Tonight, no clue. Ill decide as the day goes on Im sure.

                    That was the first time I've ever eaten kabocha squash....it's delicious! It's sorta like a sweet potato in taste and texture. I ate it as a veggie side dish: a sprinkling of salt and some butter.

                    I saved the seeds, so hopefully I'll be able to grow my own supply next year.

                          My dinners are not very "low" carb these days...but they ARE legal. Tonight is open-faced grilled pastrami and swiss on rye (100% whole grain, it's very dense) with garden tomato-basil salad and coleslaw. Dessert is apples with maple-pecan cream cheese (1T s/f maple syrup, 2T chopped pecans, 4 oz cream cheese, makes 4 servings).

                          Get to Maintenance you guys!!!
                          What is it, a RACE? It's coming off, right????

                            I packed what I had for dinner yesterday and will take it to work for dinner tonight ...

                            lets keep trying ..for some more creative and fun ideas for foods...

                            the season is changing and so are the fruits and veggies...I love the fact apples are part of my diet I add them to all kinds of dishes now ....
