  • Help please Heidi!

    Or anyone else.

    I have a slow cooker (crock pot) and would like to use it again, its been a while since I have done. Can anyone suggest a cracking Atkins friendly meal that I can make in it?

    Rushed right in when I saw the title of this thread - omg Rich ya scared me! I thought there was something wrong with Heidi and she needed our help!

    Crock pots - love them. Sorry I can't help you with recipes. Looking forward to seeing what others come up with though

      oh oh oh oh ......... I made Megs Butter Spiced Almonds this weekend in the crock pot. We love em! Several people stopped by this weekend and EVERYONE took the recipe.

            LOL dang Rich, glad I wasn't the only one thinking she was in trouble.

            I make bbq in it. I'm not sure if you have two kinds of sauce over there but here their is what is called Carolina BBQ which is a vinegar based sauce and then a sugar based sauce. I do carolinia in the crockpot. which is basically meat slow cooked with a littel vinegar, onion and near the end tomatoes to make it a red sauce. tried to pull you the exact recipe but our search thinks BBQ is too short to bother looking for.

            I love to cook greens like colloards in there. recipe is in the data base Rich
            and a NEW ENGLAND boiled dinner ( veggies like turnips cabbage onions and meat of choice could even be used in induction) or sausages and cabbage or kraut would be good too.

            chilli is great in the slow cooker too.

              If you want to make a stew, be sure to brown the meat before you add it to the crock pot. That will help to develop flavor. I also don't add herbs until the last 10-15 minutes of cooking, because the crockpot seems to cook away the flavor sometimes.

              Otherwise, brown the meat, toss into the crockpot with some salt and pepper. If you want a gravy, put equal amounts of onion and celery into a blender and puree until smooth. If you like you can add garlic to the mixture. Pour the vegetable puree over the browned meat. Set your crockpot on low, and cook for 5-6 hours until the meat is cooked through and tender. Check it every so often to make sure the gravy isn't too thick and will burn. If the gravy is too thin after it has cooked, pour it into a pan and boil it down until it's the consistency you want.

                    I roast a whole chicken in mine, breast side down on high for about 3 hours. It falls slap off the bone and is nice cause you ain't gotta pay attention to it until it's done.

                    Honestly, my crock pot stays in the glass room alot. I use for keeping lampworked glass beads from getting too cool too fast before they hit the kiln.

                    I use this recipe for BBQ. I have posted it before but you know me, I like to see my name in print.

                    Melinda's BBQ Sauce or Ketchup replacement

                    1 15 oz can tomato sauce
                    4 tbsp Worcesteshire Sauce
                    1/2 tsp liquid smoke
                    3 tsp Frank's Red Hot hot sauce
                    1 tsp chili powder
                    1 tsp ground mustard seed
                    1/2 tsp paprika
                    6 pkts Splenda
                    1/2 tsp cumin
                    2 tsp onion powder
                    2 tsp fresh chopped garlic
                    2 tsp beef base or bouillion
                    2 tbsp + 2 tsp white vinegar

                    Mx it all together and bring to a simmer.
                    Turn off and let cool. Pack it in the fridge for atleast 6 hours.
                    Use liberally, well, atleast that's what I do!! It keeps for a few weeks in a closed container in the fridge. Well, it only keeps in my house about 2 weeks and then I have to make more.

                    I would also like to see that chicken curry recipe, Heidi, PLEASE!!!! Pretty please???!!

                          ok here you go ...and most likely what I will be having here today

                          I am so easily distracted with food ...

                          Curry Chicken

                          1 chicken cut up
                          1 eggplant washed and diced (if you do not care for eggplant use anything you like my family loves this with cauliflower or red bell peppers ...personally I love the taste of eggplant chicken and curry together it is such amazing synergy in your mouth ..I promise)
                          1 diced onion
                          6 (or more) cloves of garlic minced
                          a good 2-3 inch piece of fresh ginger root grated (I leave the skin on and grate it after washing it ..the best flavor in ginger is right at the edge of the skin so don't peel it!)
                          1 cup strong chicken stock (I use 2 Knorr Chicken cubes in 2 cups water.. but you can use any stock you like home made would be best but canned or cubes are fine)
                          1/4 cup Madras curry powder (if it is a strong curry powder you have then use half less is more for some folk .I know for a fact you can buy primo curry powder there if you have Beta Pac from Jamaica you will be doing this right )
                          4 (or more depending on the heat you want to put into this dish) minced hot chile peppers (Thai bird or habanero what every you have locally in the way of fresh hot peppers works)
                          3 bay leaves
                          1 can coconut milk or if you don't eat nuts you may use 12 oz of heavy cream of course if you are not into nuts yet...

                          Brown the chicken with the onions and garlic add the spices at the end then toss into the crockpot with the veggie of your choice pour the stock in....then it depends on your pot ..ideally this should cook at 300 until done


                          on the table between you ....set the bowl of curry along with small bowls of sour cream ..a bunch of chopped fresh cilantro...green onions (scallions) chopped, . salted peanuts...chopped chiles or hot sauce...whatever actually ...I love to put some ice cold mangos out with this ...

                          have a plate piled with fresh romaine leaves ...then take a leaf fill it with a spoon of the curry ...add some of each topping .roll it up small .....and put it in HER mouth ......
