  • Beer braised pork and Sauerkraut.

    I saw this recipe on tv today and thought it sounds fabulous. Not induction friendly obviously because of the beer. I'm sure you could leave it out and use something else, broth maybe? I'd leave the carrots out as well.

    1 large smoked pork hock
    1 cup onions, chopped
    1 cup carrots, chopped
    1 cup celery, chopped
    5 cloves garlic
    3 bay leaves
    4 bottles beer
    2 lb sauerkraut
    2 medium white onions, julienne
    2 oz vegetable oil
    Fresh pepper
    1 cup fresh diced tomatoes
    Dijon mustard

    1. Place the onions, carrots, celery, garlic, bay leaves and half of the oil in a braising pot, cover with lid and sauté until translucent.
    2. Add the pork hock and the beer, then place in a preheated oven to 375F degrees until the meat is tender.
    3. Preheat a skillet, add the remaining oil and white onions and sauté for a few minutes.
    4. Add the sauerkraut, some fresh pepper and a sprinkle of beer. Allow to stew for about 15 minutes.
    5. Add the chopped tomatoes and sauté for a further 5 minutes.
    6. Serve the kraut with a few slices of the pork and some mustard on the side.

      I'm thinking of trying it in the crockpot....I'm sure it would work? I actually saw the chef make it...the ham was falling off the bone, it looked amazing. I just love sauerkraut!

      2big it would be ok to use just a regular beer? i doubt the beer makes a huge difference in the counts other than the taste and help tenderizing the meat?

        you are a goalie so the regular shouldn't be a factor for you but you may need to watch for any reaction if you haven't been using regular beer.

        My beerless one is cooking now. Mother is allergic to the stuff in the beer and I want her to be able to have some so I just dumped everything except the tomoatoes in with the ham instead of the beer smells wonderful

          that recipe needs 1/4 cup sweet paprika in it just mho

            You will have to let us know how it is! I think I may bring my crockpot up to the cottage this weekend and have it saturday (sun is thxgiving) for something different.

              does paprika go well with ham? One thing i'm not great with is playing around with spices, i know garlic goes with beef, oregano or basil goes with tomatoes..that's about the extent of my spice knowledge LOL. I am going to the bulk store this week and they have wonderful spices..i will pick some up.

                just remember to only pick up what you can use as some folk think you can keep those huge containers of spices until they are empty but they lose potency every day they are sitting there as you know if you have ever smelled a can of nutmeg against some fresh grated nutmeg.

                Hedie is the stuf in the spice aisles sweet or hot since it only days hungarian paprika?
