  • Celery Root

    Does anyone ever cook with celery root. Its one of the induction friendly veggies and I just found a recipe that I might try, but it calls for grapes and grape jelly. I can avoid the grapes and use sugar free jelly but I thought I'd ask if anyone had a better recipe for it. I need to expand my veggie horizon

    I saw Bobby Flay cook it plain and then purree it. it looked like mashed potatoes so you could most likely do your cauliflower bake with it. he chopped it up and boiled it till tender drained the water and used the food processer.

      I liked the contessa's but didn't have champange vinegar it was a lot like coleslaw without the sugar

            when you get to OWL rung 8 you can roast it with other root veggies like carrots parsnips. toss some garlic on there and make a killer mashed veggie dish.

                forgot to tell you to use a rubber mallot to hit your knife it you are not stong enough to chop through the stuff and don't try to grate it by hand if you want to grate it for the salads instead of match stick it cause that was a lot of work

                  you can bake it whole and when tender and cooled peel it if you would rather d it that way too.

                    how about pan roasting it with onions, bacon, and cabbage to go with a roast or heck roast it with the roast.

                      I cook with celery root!

                      In the Low CArb Cooking lessons forum (In the LEssons forum), there a thread called Snack Chips. You can use the celery root and fresh pumpkin for chips.

                      I also like boiling it with cauliflower and mashing it together. Put chunks of it in stews. Make a winter vegetable cream soup with it, celery, turnips and cauliflower.

                      A french preparation is to make a slaw of that and carrots.

                        You guy are awesome, BUT I went to the commissary go get some and they didn't have any. Is there a season for Celery Root.

                          I typically find it now through early spring.

                          Oh, I saw a cooking program...Lydia Bastianich's Italian cooking show. She made a potato soup base and one variation was to add cubed boiled celery root and lots of green onions to it. I think you can sub a cream of cauliflower soup for the potato soup and do what she did with the celery root and green onions.
