      Wow, I was just thinking of starting a 'post your soup recipes here' thread because I'm dying to make some soup and I need some atkins friendly recipes, and what do I find? Woo!

      Keep them coming! I might try that cabbage soup, although my bf doesn't like blue cheese...

        My old standby for cold (below 70 degrees) nights is Cauliflower soup.

        Chop up some bacon, and fry in the bottom of a heavy soup pot.

        Sautee 1 medium onion in bacon grease.

        Add 2 heads of cauliflower, chopped, and some water. Don't cover the cauiflower with water, just enough water to come about halfway up to the top of the cauiloflower. I'd guestimate 2 cups of water. Add chicken bullion (1 or 2 cubes). Steam until the cauliflower is mooshy. Using a slotted spoon, put cauliflower in blender with just a little broth. Blend until it's pureed. Stir this back into the pot and add 1/3 cup of heavy cream. Salt and pepper to taste. I like this with a lot of cayenne pepper. Mmmmmmmmmmmmmmmmmmm....

          Ooo...Ms. Phode, cauliflower soup is so versatile: if you add cooked cubed chicken to it, it becomes a creamy chicken soup. If you use clam juice instead of the chicken broth/bouillion and add chopped clams, it's a great clam chowder or seafood chowder if you add other seafood.

          Sometimes I make a cauli-brocco soup using half cauliflower and half broccoli too.

            Today in Maryland is just grisly- after 70-80's last week, weve plunged into cold, wet windy catch-a-cold weather.


            Time to pull out the hot peppers and cumin or chili powder! Throw that in with some meat or poultry, and even if you don't add beans, it's gonna be good for a night like this. The bead of sweat on your brow if you make your soup hot enough is sure to send the colds & flu hiking. I think I'll do this tonight, and throw in some broccoli, tomato and leeks.

              Oh by the way, the oxtail stew recipe posted upthread was fabulous!! I subbed turkey legs for it and it was very good. The flavor of the sauce was great. If I can get a hold of beef short ribs, I'll use them in place of the oxtails.

              I cooked it in the crockpot. What I did was brown the legs in oil, then tossed the legs, the onion, tomato, pepper, salt and allspice into the crockpot. I deglazed the pan I browned the turkey in, and toss that liquid into the crockpot. Set it on low and let it cook all day. I removed the legs, and pureed the veggies and the cooking liquid. Returned everything back to the pot to heat through. It was melt in your mouth yummy! I had to kick myself a couple of times because it would have been delish served with faux-tatoes or faux mashed sweet potatoes.

              The next time I'll make this, I'll puree the onion and tomato in a blender. I'll mix that puree with a liquid (the browning pan juices) and toss that over the meat. Then cook in the crockpot.

                I couldn't find beef short ribs at the market, so I cut a boneless chuck roast into 2 inch cubes (boxes really). Browned them, tossed them into the crockpot. Threw the onion, tomato and little celery into a blender and blended them until very smooth. Added the black pepper, allspice and salt. Poured the onion mixture over the meat. Set the crockpot on low. Cooked it. Removed the excess fat. And had a FANTASTICALLY YUMMY beef stew last night along with a side of faux-mashed potatoes and some green beans!!!!!!

                I'm sure if I didn't puree the vegetables, but kept them chunky and cubed the beef alittle smaller, add some other veggies (cubed turnips, etc.), it would have made a terrific beef vegetable soup!
