    So, I finally found this interesting piece of food at Publix. I have been searching for it a while now. I tested it out four different ways:

    1. raw
    2. raw with lemon juice (didn't have lime) and chili powder
    3. deep fried with splenda and cinnamon
    4. deep fried with salt, pepper, and low carb ketchup.

    The two raw versions are okay. For the deep fried sugary version, I think I can find more creative ways to use my splenda allowance than with jicama.

    So... *drum roll please*....

    #4 beats all! It was really good this way! It was like a half way fried potato ( I *loved* my potatos cooked half way. I know. I know. I am weird) This is definitely becoming a staple at my house.

    Anyone else have any creative ways to eat jicama?

    I like it raw the best. But I also like it cooked in the manner of a potato pancake: shred the jicama, add alittle onion, mix with and egg.

        There is a recipe on here for jicama bread...



        I haven't tried it, but the picture sure looks good!

            The jicama bread looks fantastic. I have to go to Publix to buy another so I can try that recipe.

              I love jicama and have a terrible time here finding it fresh . I pay $2 a lb for it only to get it home, cut it open and it's brown inside .


              When i do get the odd fresh one, i like it raw sprinkled with a bit of lemon juice then either dipped in plain sweetened yogurt..or nat p butter (neither are induction friendly).

              I've tried cooking it but prefer it raw.

                cut it into fine 'straws' and put on your salad. It really gives a nice flavor and crunch!!
