    I made this wonderful dessert last night ..I love the Indian noodle dessert my friend makes and thought what the heck let's try it with spaghetti squash?...it was really good!!!

    again I do not use Splenda or other but I am aware others do so I will add it here so you can choose...BTW I also added it to the dessert section...

    Meethi Sewai

    1pint heavy cream mixed with 1 cup water and 2 eggs in a blender
    3 cups cooked spaghetti squash fluffed up
    1 tbl unsalted clarified butter or ghee or just use regular butter it does not matter much in this
    pinch salt
    splenda 1/2 cup
    Cardamom powder 1/4 tsp.
    Sliced cashew nuts and almonds 3 tbsp
    1. melt butter in saucepan toss in the nuts and then the spaghetti squash
    2. Add cream mix, cardamom powder, bring it to low boil.
    3. Reduce the heat and cook until the mixture becomes thick and creamy.
    4. Add splenda and stir well.
    5. Refrigerate and serve chilled.

    Decorate with a drizzle of clarified butter and more sliced almonds.

    mmmm that looks so yummy! :yummy I'm such a massive fan of Indian food. I'm so happy that many of their dishes can be adapted to Atkins. :joy

    I'm still unsure as to whether or not we Aussies can actually get this "spaghetti squash" of which you americans speak.


    These are the only sorts of 'squash' that i ever see in the supermarket. The long one on the left is what we call "zucchini" - but i think you call is squash too, right?

    And by the way - YES you are FAR too young to be a grandmother! My mum is 52 and trust me if I have anything to do with it, she's a long way from becoming a grandmother any time soon hehee.

    Goal: Running around in miniskirts and bikinis come summer - only a couple of months away here!

      I bet you could use some julienned squash or pumpking for this it just would not have the same texture...sorry I can not think of anything else like it!

        oh well. There's heaps of other great stuff here so never mind.

          I have heard that Zuchini can be wonderfully spaghetti like when shredded, you just have to slice it into noodle-like strips. Zuchini-bread is also very popular in the US (don't know about Australia) so the veggie does work in sweet as well as savory settings.
