    I actually got the idea from the Ninja Turtles cartoon. It is surprisingly very good, I would suggest you try it out, if it wasn't completely Atkins-innapropriate.

      I'll pass, but I don't even like peanut butter and jelly! No sweet and salty mixes for me please!

        I totally cheat when I want dinner rolls or biscuits. I go to my Asian supermarket and buy a bag of "Tofu puffs" (also called soy puffs). They are just deep fried squares of tofu. They have a nice golden color and a "bready" texture, but alittle chewier than those white bread rolls. Serious heat-and-eat type stuff.

        My market also sells thinner tofu puffs in the freezer section---I use those for toast sometimes.

        The other thing that works well is the Atkins Revolution Rolls ( http://www.low-carb-diet-recipes.com...ion_rolls.html ). The original recipe used cottage cheese instead of cream cheese. I use ricotta and add a pinch of salt and a pinch of onion powder instead of the sweetener. If you add about 1/4 cup of whey protein or vital wheat gluten flour to the egg mixture, it becomes sturdier and more bread-like. I cook them in muffin tins if I want "rolls". Adding a tablespoon of a fiber supplement like Benefiber (hydrolyzed guar gum) stabilizes them further.

              Are you talking about the Tofu Pouches to make Inari?...no way I would never hear the end of it.!!! oh Lord no ......ok ok I will out myself with a little holiday story from my kitchen to yours!.... I confess I once served a tofurky...Yup I went to a store found one in the freezer section actually paid for it and walked out the door with my proud box of holiday food that was totally void of suffering...I took the parts out of the box and it was kind of tragic there are two cut out leg thingies and a very strange shape "breast"...there is "gravy" and some other junk ...I read the box and did what it said with some additions like butter and wine...as it was roasting my house smelled disgusting! Like hair burning....I should have known this was a dumb *** idea when I first uttered the word "Tofurkey" out loud there is something innately wrong with the word itself......So the thing was done and I took it out and placed it on a platter...well a tiny platter ...the thing only weighs about 3 lbs....I garnished it as best as I could and was very relieved that I had also made two huge pans of enchiladas!....Ok you present a Tofurkey to a table full of men all big giant men who love turkey and see if you ever live it down...yeah I learned from that one!!!

              I want to make a scratch dinner roll that fits someplace in OWL...anyone else in on the challenge???? Come on you good cooks!!!....and more holiday stories!!!!

              I appreciate the thought of the tofu pouch but you see I have allready scarred my family beyond repair with the Tofurky ..the only tofu they eat is in Ethnically correct food...

                I just placed an order with Honeyville for WPI, Polydextrose, Oat Fiber, and Corn Bran. As soon as that stuff gets in I am on with this.

                    I tried this recipe once for a loaf of bread.
                    It wasn't bad, and the texture was good
                    1/4 cup rolled oats
                    2 T raw wheat germ
                    2/3 cup boiling water
                    1 T blackstrap molasses
                    1 T Splenda
                    1 T butter, softened
                    1 t salt
                    1/2 ground almonds in the coffee grinder
                    3/4 vital wheat gluten (Got it from Bobs Red Mill in Oregon Heidi)
                    1/4 cup vanilla flavored whey protein powder
                    2 T water and 1 t yeast.

                    Pour the boiling water over the oats and wheat germ and let it sit for 15 minutes. Then dumb in the rest and. It makes 8 slices with 5.5 gm carbs each and 0.5 fiber for a total of 5.
                    Could they be made into muffins. I don't know, but probably.

                      No, not the tofu pouches for inari. Tofu puffs are pieces of tofu---anywhere from a 2 in by 2 in cube to a 3 x 3 cube of tofu. Nothing pouch like about them. (Tofurkey is foul---tasted it once when I was a vegetarian--yuck!)



                      Another recipe is this one.


                      I've made it twice. The first time I over cooked it a bit and it turned out a little dry (made good breadcrumbs, toast and croutons). The second time it was better. I made it in a loaf pan both times, but it would probably bake well in a muffin tin.

                      Frankly, I think if you want a "bread" stuffing for your turkey, this is the recipe you should try for the bread part as it has the texture of regular bread.

                        No bread stuffing!. we are competing to make a dinner roll for Thanksgiving!....do you want in?..
                        .I am specifically needing something that will feed 5 guy in their early 20's and three men in their 40's..something they will enjoy .....there is no way I can bring a tofu puff in the house for Thanksgiving!...I myself LOVE tofu! and am sorry I can not eat it now! I actually think it makes a great noodle!...but my family is scarred by my long history of trying to make them "Healthy" so they have had their fill of it in its various shapes and forms the Tofurky was just one tiny story in a very long lifetime of searching!

                          you guys make the rolls! then report back this is a current challenge! come on! I bet you can do it and kick butt there are some awesome foodies on here....I have my own self interest here!!! I am going to the Coop today and getting what I need I am not sure if I even know what the ingredients Nullo is talking about are but I am going to look and see if I can find the corn bran!...I love that stuff!...it actually has flavor! I have used wheat gluten a lot on my yeast dough it was my "secret" in my pizza crust that and masa....
                          What I find so fun about this is the hints shared!!! This stuff really is pretty new to me and I have a passion for food as we all do! Challenges also get us going!...so make a dinner roll and then let us know what you did and we can see who gets the closest to the real deal!!!!
