  • Butternut Squash--OOPS!

    Well, silly me, thinking all squashes were created equal.
    And silly me, for assuming DANDR leaves nothing out.

    I am on the veggies rung, and when I went shopping last night, I happened to notice that squash were on sale--all types! I had checked the book before I left, and though I did not see all squashes listed under induction veggies, the missing ones were NOT listed as starchy veggies either.

    So I purchased Butternut and Acorn squash, because I remember my mom cooking these as a kid, even though I never ate them then LOL.

    I found a recipe for Butternut squash, sort of like faux mashed potatoes, and went for it. I mashed them up and they smelled delish. I began to eat them and I thought WOW this tastes sweet. So I double checked that the salt I put in was INDEED salt and not sugar, and it was salt. I was already getting full, so I had a very small serving. I checked the carb counter in the back of DANDR, and noticed it was pretty similar carb-wise to pumpkin, which is allowed on induction. So I was still like, OK no problem.

    However, I double-checked on the board, and I found that Butternut is considered a starchy veggie. Do you think I screwed up royally? My other carbs during the day were from 3 cups of salad veggies, 3 oz cheese, 1tbsp cocoa, 1 tbps heavy cream, for a total of about 18 carbs...adding in the squash, that totals about 25 on the nose.

    Do you think this will be a big problem, plan wise? Obviously I know to throw out the rest of the cooked squash <crying> but will this affect my progress?

    it will depend on how your body and your mind react to the sweet tasting food. many folk are genetically programmed to eat sweet then eat a bunch. if you are not craving then you survived and just need to store the rest of your squash for when you get there. it is that sugar content that makes them a rung 8 veggies bet an eat frequent one.

      LOL! Go read Valid 's journal! We just had a discussion about these delectible squashes! Theoretically, it's a legal food but just not for you at this moment. I believe the starchy rung is for only once in a great while! Don't worry over it, carry on!

        actually the starchy rung foods are for whatever your metabolism can handle. Many fook can have carrots daily with no ill effects when they arrive there.

        One nice thing about the rungs Dr Atkins did in the Atkins for Life book which would have been oin the next DANDR I'm sure was create an Atkins GLycemic Ranking for all those commonly eatten foods in each rung so you had a heads up on what was going to pose a problem in each rung if you wre sensitive. acorn and butternut squashes are on the eat moderately but then so is pumpkin. If your body can handle the glycmeic impact of the veggie as you seemed to do well then when you get to the dtarchy veggie rung you can know it shouldn't be an every meal food but you can have it when you want it. the starchy veggies to eat sparingly were potatoes white rice and sweet potatoes.

          Julirama if it makes you feel better, you can add me to the 'ooops' list too. I did the exact same thing while at the veggie rung too. I had the exact same thought 'wow does this ever taste sweet' LOL. Never had a huge effect on me, and i can now eat (in maintanence) any squash without any issues. Like 2big says it all depends on how your body reacts.

            Oh I feel so much better!

            I didn't eat much of it, but what little I did...I thought to myself, "gawd this is TOO good to be a vegetable!" (Hmm perhaps I should cut back on the pumpkin...I'll make a batch up, and probably eat it, on average, twice a week. I treat it almost like a dessert--warm, with cinnamon and cream cheese.)

            Thanks for all of your replies! I went to the store and bought LEGAL squash, so we'll see what kind of trouble I can get into with those.
