  • Help!

    Thanks! How do I know if a spaghetti squash isn't ripe enough? I cut one in half and the seed area is brownish, and it was very hard to cut open.

    I'm cooking it now...but a little afraid to eat it...

    I think as a general rule, all squash are different to cut open...but shouldn't it be yellow inside? I don't think it would hurt you--try it, and if it's gross, don't eat it.

    Wow, did you think such wisdom was possible from only one person? I'm such a dolt.

    Maybe someone else will be able to help you better than I could--I really hope so!

      higgies, when i cut them open the seeds are not brown.

      was the squash a pretty yellow color on th outside?

          Higgies, the spaghetti squash is pretty danged hard to cut when it's raw. I have to put some muscle into it. I cut mine in half length-wise, place open side down in a pie plate of water and microwave it to cook.

            Well, I could barely tell tehy were spaghetti squash at the store because they were all so tiny! I picked one that looked good. Well, I scooped out the brown seed part and cooked it. It came out more mushy than stringy like I remember having when my mom used to make it for me. I probably overcooked it a bit, but it was alright. Just not what I remembered...Hopefully I don't get sick! Thanks for the help guys!

                Mmmm...Acorn Squash...but I'm so used to eating it with maple syrup like my mom made. I love butternut squash too! Can't wait for Thanksgiving!

                  I bought an acorn squash the other day....poked some holes in it with a knife, microwaved it for 10 minutes....cut it in half, scooped out the seeds and then stuffed it with Jimmy Dean Sage sausage and some chopped up jicama.

                  Man oh man that was good. The squash was kind of sweet on its own...and 1/4 of the squash with the sausage was VERY filling too.

                    OMG that sounds awesome! I rarely buy acorn squash because i always think you have to roast them and it's so much trouble. Never thought to do it in the microwave.

                    Higgies I wouldn't worry too much. If it tasted ok I'm sure it was fine. I don't think you'd get sick on a veggie if it tasted all right. I think if it was really bad you'd know.

                    This always seems to happen to me with Jicama, they're always brown when i cut them open I've given up on them.

                      Jen, there was a little sticker on the squash with the instructions to pierce the skin and then microwave for 10 minutes. After 10 minutes it's mostly cooked, but not totally. I roasted it in the oven after I stuffed with the sausage and jicama, just until the sausage was cooked.

                      If you get a chance, definitely give this a try. Make sure that the sausage you get is sage sausage...the flavor is sooooooooooo good.

                        I have been cooking butternut squash lately the same way - partly cooking in the microwave then stuffing with a ground almonds/grated cheese/egg mixture and baking in the oven!! Delish!!

                          Yep - put it in the nuker whole, cook it, then cut it. If it's soft enough, you can eat the skin too for extra fiber. If the seeds are brown, they're probably too mature (and tough) for eating, unless you cook them like pumpkin seeds or shell them; other wise, you can eat them too.

                          I just add butter & seasoning to mine.

                              What is jicama? Also, do you mean to say you stuffed it with raw sausage? Mmmmm I'm getting so hungry reading these threads before breakfast!
