I've been looking at Linda's low carb recipe site and am amazed at the cauliflower recipes that look like potato and rice substitutes. Everything looks great. Has anyone tried these and what seems to be the faves? I've always eaten a lot of potatoes and rice both, so I am eager to try them. I bought some frozen cauliflower today - hope they are as good as they look.

I could never get over the turnip-y taste. I use Cauliflower all the time to make fauxtatoes (I posted video here on that), and I just started to make fried rice again. My 8-year old daughter made the comment today after that she likes cauliflower mashed potatoes better than the sugary kind.
Sometimes, good food is the easiest way to make converts.

I made Chicken and Yellow "rice" just last night using cauliflower as a substitute for the rice. I use Goya Sazon (seasoning) Con Azafran to make the cauliflower "rice" the yellow color.
We love the fauxtatoes too. I add cream cheese to it to make creamier.~Joy

I bought a 'potato ricer' that i use for ricing cauliflower. I find when served with stir fry etc it's jsut like rice since it just picks up the flavour of whatever is over it.

you can boik radishes and uses them for taters in potato salad dishes since the radish taste leacves when cooked too.

I add turnips to the cauliflower to give it a more potatoe-y taste. I use about 3 parts cauliflower to 1 part turnip. If you don't like turnips, I find that using 1 garlic clove per 1 cup of cauliflower does the trick too.
Also, after I boil them, I drain them very well...let them sit in the collander for a few minutes to really get rid of the excess water. Then I toss them in a food processor and puree until smooth.
The Cauliflower-Leek puree in the recipe section of DANDR 2002 is good.
And I use frozen cauliflower.~Megs~

I too like cauliflower, tried to buy turnips cone day but mine didn't turn out so well, but I may just not like turnips- I don't think I ever had then before! lol Last Thanksgiving I made a great recipe for stuffing substitute, and it had cauliflower and sausage in it, and I used veggie sausage it was a HUGE hit! Everyone loved it, I will see if I can find it for ya!

I made the Mockafoni and Cheese from Linda's recipe site last night.
TO DIE FOR. It tasted more like a cheesy potato dish than mac and cheese, but it was freakin' awesome.
I added broccoli florets and bacon bits to mine.
And I'm looking forward to my lunch break today... leftover mockafoni and cheese... mmmmmm.
