I found this recipe on the box of Triscuits (no, I wasn't eating them!). Thought it sounded great (but haven't tried it yet) and would be a nice appetizer to serve (or take):
CREAMY BRUSCHETTA SPREAD
8 oz. of cream cheese
2 TBS finely chopped fresh basil
1 clove garlic, crushed
1 medium tomato, chopped
1/2 C chopped cucumbers
1 small onion, chopped
4 large black olives
2 TBS italian dresing
Mix cream cheese, basil and garlic until well-blended. Spread onto 7-8 inch serving plate/small decorative platter, with center slightly indented to form rim around outer edge.
Combine tomatoes, cucumbers, onions, olives and dressing, and spoon into center of cream cheese mixter (like pizza topping).
Serve as a spread/dip. (Obviously, the recipe recommends triscuits, but I bet it would be good with celery or on flax crackers.)
