  • United Kingdom Questions

    First, one of my fave meals was chicken in breadcrumbs and I really miss it. I'd dip the flattened breasts into egg then breadcrumbs. What can I use for breadcrumbs? I've seen on the board pork rinds, but I cannot get any that you can crush, only the fresh ones and I tried it with them and just got a load of greasy slime.

    Second, I re-read DANDR. Dr A mentions soy flour as being "legal." Can we buy this in the UK and what can I use it for?

    Third, I came across Atkins Morning Shine bars and bought loads as they were half price. I rather like them and could happily eat one a day for 2 carbs. Is there any reason why I should not eat them? Ditto Endulge bars.

    Fourth, how can I make beef stew in my slow coooker without using flour to thicken the sauce? I assume I cannot use Oxo or Bisto?

    Hey Helena,

    I'm not sure about the breadcrumbs. I wondered myself about trying wheatgerm (which in DANDR he recommends for sprinkling on veg for constipation).

    You can get wheatgerm and I believe also soy flour in Holland and Barrett - do you have one near you? Or possibly a similar online shop?

    I think some people here would warn you re. eating Atkins bars too much - partly because they are seen as 'frankenfoods' with lots of strange ingredients, and also they don't make you address what might be an underlying complusion to eat sweet snacks. However, I'm sure others would disagree. I myself haven't really made up my mind yet. You could try them for a bit and then leave them off and see if effects how you feel and your loss.

    Perhaps soy flour could be used as thickening?

        Hi Helena

        There are a few things you can do for breading, if you're on induction then use parmesan cheese (not the fresh stuff, the pre-grated stuff that looks like power), just dip your chicken into your egg wash and then into the parm, pack it down and then I put them in the fridge for an hour or so before pan frying in oil. This turns out yummy, just make sure you have enough oil in the pan as you don't want the coating to stick to the pan!

        Once you get onto the nut rung, then use a mixture of almond flour and parm with whatever seasonings you want and use the same technique. This honestly tastes better than most "fried chicken" recipes I have ever tried!

        Soy is legal, however it should (by the OWL rung rules) only be used in the legume run - if you do use it, remember that soy flour is already cooked so it browns a lot faster than regular flour!! Use it as a flour substitute for baking (with a mixture of nut flours) and for breadings and the like. Once I started using almond flour I never used soy again though.

        To thicken a stew you're gonna have to get creative! Maybe cook it as normal without a thickener and then when it's done, add a little sour cream or some ild grated cheese?

          Ditto the almond flour! I haven't been able to find soy flour here - I'll be checking Holland and Barrett.

          I use almond flour for quite a bit of stuff. Sainsbury's sells bags of it by their baking aisle for very cheap (about £2). It's $15 for the same size in the US!

            "Legal" breading depends what phase of Atkins you are in.

            For Induction Phase, ground pork rinds (you all call them pork scratchings), parmesan cheese (or another hard cheese like asiago or romano), make good coatings. Josie posted a recipe for eggplant that used beaten eggwhites as a coating! And there was a note in that recipe that suggested using the beaten eggwhites then drenching them in parmesan cheese!

            For OWL Phase through Maintenance, it will depend on your particular rung of OWL and your food tolerances. So ground nuts, soy flour, other legume flours like chickpea or pinto bean flour, and grain flours (wheat, rye, barley, corn) are options.

              Unfortunately they are not legally ok on induction. Also, I would thoroughly recommend that you stay away from them. They can cause massive stalls in people, and are not good when you are trying to break your taste for sweet stuff.

                I use turnips in my stew at the beginning, and find that I don't need to thicken it at all. the turnips seem to help with this as they break down a bit. I also add some tomato paste as well.

                  I use pork rinds. I get them from Tesco. They are called...

                  Mr. Porky Pork Crackles. 6 pack, seasoned pork rinds. The bags are pretty small, only 20g each so you will need maybe 4 to coat 2 breasts or so.

                  I put them in a blender and blend til they are all crumbly. They dont go slushy, just slightly greasy but still great for coating chicken. I've also used them for a pizza recipe on Lindas site.

                    I use parmesan cheese sometimes as a breading on chicken, but it's only so-so...

                      legal induction soy id pure protein soy not soy flour also unles you love the taste of soy you are not going to like you foods with them included casue soy flavor is an aquired one.

                      if you move to OWL as they daid rung 3 is nuts and seeds and you can make some great crunchie coating with them..

                      HOWever if you do extended induction then you can add one ounce of nuts after your 14 days per DANDR and you can grind them up with your hard grated cheese any flavor of hard grating cheese you like http://www.foodsubs.com/Chefirm.html and coat your foods for a cripy crunch.

                      if you can't find those pork cracklins you can try to seperat your scrsatchings cripy part from the soft part and then chrush up the not soft part

                        Thanks everyone for your responses. I like the idea of almond flour for a breadcrumb substitute. I wonder how much it would really matter if I had this, just once in a while, even though I am not on that rung?

                            I have absolutely no idea. As I cheated while away from home last weekend by having too many veggies and some illegal veggies, I suppose I am back on induction (see siggy)

                              Ok, so back on induction it is!

                              In that case just carry on with a clean induction for 2 weeks (and if you get a craving for it, I would use the parm method, just make sure the pieces are small, it works better that way and they are pretty good) and then once you move onto extended induction (if that is what you plan to do, then you can add in an oz of nuts and use that for the breading).

                              If you go onto OWL then I would say that adding in items before you reach that rung, while not the kiss of death, is still an easy way to go off track - thats the way I did it first time around and man oh man I wish I had not done that!

                              Try the parm method, keep it clean and soon you'll be able to use all sort of new goodies in you cooking!
