I have found here in Germany Turkish Yoghurt witch is very low carb but 10% fat. It is gorgeous. Has anyone any advice about putting this through an ice cream maker? It is a little thinker than the custard I used to pour into the maker make with a low carb ice cream powder, so I may need a little water or milk in the mix.

Re: Yogurt in an ice cream maker
Certainly possibilities here. I have been using this 1O% fat Yoghurt with vanilla extract and liquid saccharin. I had to add some water as the ice cream maker was turning amd I added more sweetener because it looses effect as the mixture cools.
It wa nice, ut not quite right yet. Do I add cream? Milk or Soya Milk? Eggs? I can get very nice 3.5% flavoured yogurts - they are about 15% carb compared to the natural 10% fat yoghurt which is 5% carb. If I added the flavoured yoghurt to about 25% I could probably do without the saccharin.
Will continue to experiment, but if any of you have tried other ways do let me know.
I have tried in UK with Total Greek Strained yougurt - about 10% fat - that didn't work. The Turkish yoghurt I have found here in Germany is thicker and creamier.
I should add that what I am trying is not induction legal.Atkins didn't say 'Calories don't count',

Re: Yogurt in an ice cream maker
before you start make 1/2 your yogurt into yogurt cheese by pressing the whey out of it. this will remove liquid from it. then add your "cheese" tot the yogurt beofr eyou pout and blend them together into a thick creamy base. this should remoive the ice cryatal txeture issue from your frozzen yogurt,by the book atkinseer

Re: Yogurt in an ice cream maker
The 10% fat Turkish yoghurt is pretty thick anyway 2big. You are suggesting I should take the fat content higher that 10%? The "ice crystal" taste is absent from the mix, 2big . Perhaps I need something to help emulsification? Eggs? Glycerine? Perhaps a tiny amount of Xanthum Gum?Atkins didn't say 'Calories don't count',

Re: Yogurt in an ice cream maker
What exactly is your issue? I was assuming iy was the icey texture
from a commercial stand point frozen yogurt is really icecream base that has had yogurt bacteria added to it so it isn't really frozen yogurt and why you don't get the sour yogurt taste in it.
Ice cram really only has to have a 10% fat base to be called ice-cream in the US
they add milk solids to the cream base and icecream si really a colloidal of fat molecules supended in the sugar-ice complexwith air added.by the book atkinseer

Re: Yogurt in an ice cream maker
The iciness is not there, 2big, which is good, and the "ice cream" has almost enough body - I feel a higher fat content would improve it, but, as I said, I had to ad a little water to the ice cream maker as the mixture was turning to think too soon in the machine.
I think I jsut have to keep experiencing - but I am quite pleased with my first attempt with this Turkish Yoghurt - its the best I have made sinc ethe low carb ice cream powders became unavailable.Atkins didn't say 'Calories don't count',
