  • What to do with the leftovers

    I think one of my favorite things is Thankgiving leftovers and I just love carcass soup. I just take the picked off frame of the bird, cover it with water ( bet chicken stock would be better) add what ever is left over from the veggies, or salad, dump in some onion, skin and all (skin gives it some great color) celery, those about to go bad things that lurk in the back of the refrig that are about to turn blue and I boil it like mad until there is nothing left except the bones. Then I strain it all and add any leftover turkey meat, any bag-o-veggies that might be hanging in the freezer and if I want a Mexican flavor, I put in a bit of my new favorite spice, Chipolte Chili OMG its delicious.

    What are your favorite left over ideas.

    At our thanksgiving I normally have 14+ people so even with a large turkey, rarely is there leftovers, and when theyr'e is my hubby usually eats themthe next day for b'fast LOL.

    I have made turkey stock withthe carcass before as well..it comes out faboulous. then you can use it for any soup base.
