Okay, they just sent around the Christmas food sign up sheet for our work party. I said I'd bring a low carb spinach/parmesean dip. Anyone have ideas for fun party food that we can all share to ward off the upcoming mass quantities of party food?

I have a Christmas party on Friday, and I think I'm going to make that Stella NY cheesecake again...BUT I'm going to make it ALL chocolate, with a raspberry swirl....oooh they won't believe it's low carb!
Some other fun foods? Buffalo wings, veggie tray, meatballs, beef jerky, that cauliflower bake that people rave about...geez I'm not much help, am I? LOL All I can think about is that cheesecake!START 8/16/06 @ 270+~MG1: 220-12/2/06~MG2: 210-1/07~MG3: 199-3/2/07~MG4: 190-4/27/07~MG5: 180-7/04/07~GOAL: 170

Re: Christmas Party at Work
My favourite party plate is cheese/ham pinwheels. Just make rollups with a slice of ham and cheese and chill them then slice them thinly and lay them out in a pretty pattern on a platter. They always disappear early on, so make sure you have a 'stash' in the fridge for you to eat in case everyone beats you to them!!
I sometimes vary this by using other meats or slices of smoked salmon with cream cheese.Wondering how to get 'most' of your net carbs from your induction veggies?

Re: Christmas Party at Work
take small skewers and alternate different types of cheese cubes, basil leaves, red/green/yellow pepper strips and cherry tomato onthem like a small cheese and veggie shishkebob. You can brush them with full fat italian dressing.
My cousin makes this when we go over to her house and they're fabulous!Jen, 39, F

Re: Christmas Party at Work
I love tapas...Spanish appetizers
Inspired by tapas, I have made probably 1000 variations of mini empanadas. Last night I cruised a low carb website for more hours than I care to admitt, but i saw a recipe for a biscuit. Now with this biscuit, I could flatten it out, fill and seal it, brush it with pretty much any flavor of egg, or milk wash I want and have an unlimited number of nice little things to nibble. These things were about .38 gm carbs each. I could even flavor the dough, or mix pumpkin into it. They could be pressed into muffin pans and filled to make tartlets. They could be deep fried, they could be rolled out and cut into strips to wrap around a jumbo shrimp and slices of firm chorizo. They can be dairy, vegie, seafood, duck (any fowl), or red meat. I will post the recipe. You could make a sauce and use them like a pot pie, but i digress. You want appetizers. Be right back with the recipe.

Re: Christmas Party at Work
Ok, so it was something else that was .38 carbs each, but here it is....
Garlic/Cheese Biscuits
3 eggs, beaten
1 1/2 cup whey protein powder
1/8 c oil
1/2 c cream
1/4 c water (add slowly, don't make too thin)
1 1/2 t butter extract
3 oz grated cheddar cheese
2 T baking powder
garlic powder (5 healthy shakes)
Preheat oven to 350. Mix all ingredients together. Dough will be almost like cookie dough. Drop by T onto greased cookie sheet. Bake 10-15 min, til slightly golden. (Makes 18, 2.1 carbs ea.)
Total: 26 carb, 5 fiber (21 NET carbs), 1628 Calories, 180 fat, 120 protein
Makes 18 @ 1.2 carbs, 90 Calories, 10 fat, 7 protein
So many variations can be made with this.

Re: Christmas Party at Work
Here is a blast from the past.....escargo in garlic butter in shells. Sometimes I broil sea scallops and shrimp with thin sliced green onion, ground fresh red chile and butter and serve in pretty sea shells.
Here is one for a crowd:
Chicken Macau
INGREDIENTS: 30 wings-SERVES 4-6
FOR CHICKEN WINGS:
4 garlic cloves
2 shallots
1 1/2 teaspoons salt
1 tablespoon Chinese five-spice powder
2 teaspoons paprika
1 teaspoon crumbled dried rosemary
1/2 teaspoon cayenne, or to taste
2 tablespoons peanut oil
4 pounds chicken wings (about 30), the tips cut off and use to make stock.
FOR THE SAUCE
1/3 cup creamy natural peanut butter
1/2 cup coconut milk sweetened with 3T splenda
2 garlic cloves, chopped
1/4 cup chopped roasted red bell pepper
1/8 teaspoon dried hot red pepper flakes
1 teaspoon soy sauce
Garnish with cilantro
PREPARATION:
CHICKEN WINGS:
Mince and mash the garlic and the shallots to a paste with the salt and in a large bowl stir the paste together well with the five-spice powder, the paprika, the rosemary, the cayenne, and the oil. Add the chicken wings, stirring to coat them well with the marinade, and let them marinate, covered and chilled, for 6 hours or overnight. Arrange the wings, skin sides up, on the rack of a foil-lined large broiler pan and bake them in the upper third of a preheated 425 degree oven for 25 to 30 minutes, or until they are golden brown. The wings may be prepared 1 day in advance, kept covered and chilled, and reheated.
SAUCE:
In a blender blend together the peanut butter, the coconut milk, the garlic, the bell pepper, the red pepper flakes, and the soy sauce until the mixture is smooth. Season the sauce with salt to taste.
Transfer the sauce to a serving bowl set on a platter, arrange the wings around the bowl, and garnish the platter with the cilantro.
These are yummy and go fast.

Re: Christmas Party at Work
Another fav of mine is to buy the wood sticks and put chunks of meats (chicken, pork, meatball), cauliflower, broccoli, green peppers, onions, and cheese. They look very colorful and each person can grab a stick and go.
Sometimes I'll make pepperoni and cheese chips (just nuke them slightly in the microwave to make them crisp) and have a bowl of dip in the center. I decorate the plate with slices of green peppers, cucumbers, broccoli and cauliflower.
Last year, I made tiny meatballs and put cheese caps on them to look like little elf heads. I decorated them with little slivers of veggies. They were adorable. I put a small holiday toothpick holder in the middle of the dish and everyone picked them up like that and ate them.Starting Date 3/12/04 285/165/145 - F

Re: Christmas Party at Work
I love work Christmas parties
After reading this thread with all the yummy ideas I realised I could still make an old fave of mine.
Cheese Balls, made with tasty grated cheddar cheeses, cream cheese & herbs, sometimes with onion in them too. I make about 3 for a nice platter, about 2 inches in diameter and roll each one in a different coating. Paprika is yummy, or finely chopped Parsley, if on the nuts rung that would be so delicious rolled in toasted nuts. Make them the night before and pop them in the fridge so the flavour infuses. Serve with Atkins cheese crisps and veggies. Perfect, now I know what to take to one

Re: Christmas Party at Work
This has given me a lot of ideas. I've been requested to make some pies for my Christmas party at work. Greaaaat! But I'll make sure I also take something I know I can have. A cheese ball with the celery and other veggies is a great idea.

Re: Christmas Party at Work
With ham I usually use just slices of gouda cheese which are fairly flexible and roll up neatly then wrap clingfilm (saranwrap?) around each roll to hold it together in the fridge. On taking out and slicing they are set in the shape and dont unroll.Originally posted by bilowiElizellen, do you use cream cheese or mayo or something with that?
I use cream cheese with salmon slices to help them stick together.
I dont add mayo to mine as most non-lowcarbing people freak out if it looks to have too much fat! LOL So I have a mayo dip with spices/chives mixed in it on the side.Wondering how to get 'most' of your net carbs from your induction veggies?
