      The dessert will be a two layer thing. I made a pumpkin cheesecake last year and I was dissapointed with the results. I am thinking I will make a dense bourbon-cheesecake for the bottom later, bake it partially to solidify, then add another layer of ground nuts, then the pumpkin pie layer, bake it again to finish.

        Deb, Shhhhh don't tell Megs I told you so, but she has some of here great recipes on her blog sight. http://www.geocities.com/not2latespage/ I go to it often when needing something really good and tasty.

            Were is this recipe please! Faux "candied" sweet potatoes (with sugar free meringues on top) Thank you!! I am going to make all these things I can eat for Thanksgiving!! My brother does Atkins too but I think he might cheat for thanksgiving....

              All I do for the candied faux sweet potatoes is to use a regular "candied sweet potatoes/yams" recipe, substitute pumpkin puree for the sweet potatoes and artificial sweetener for the sugar. The sugar-free meringues are store bought. They were made by Miss Meringue, but I checked their website and they don't have the sugar-free meringues anymore. They can be left off without affecting the faux candied sweet potatoes.

              This year I'm not going to do the faux candied sweet potatoes. I'm just going to use pumpkin puree, heat it up to get rid of some of the liquid, and mix it with butter and alittle heavy cream. This makes a great mashed sweet potato subsitute.

                Kroger has a sugar free low carb merangies right by the deli section if you need them.
