We love mexican at our house, so the other evening I made a mexican meal. I mixed ground beef with some mexican spices (cumin, red pepper flakes, chili powder, black pepper) and with an egg, diced onion and diced green pepper. Fried them up just as you would a hamburger, served it on a bed of shredded lettuce with 1 tbsp guacamole on top! Yum yum and more yum

lol lol lol........ must have been the day for Chili Megs, I made it yesterday also. Along with Taco meat for salads this week. Yes, ground beef was on sale!
How bout pork chops? you don't have them often do you?
I know your gone now..but for future: I love to brown ground beef, add some chopped onion, canned diced tomato and salt an pepper. I add some raw shredded cabbage and simmer until the cabbage is cooked (i like it with a bit crunch). I eat it with a dollop of sour cream on top...it reminds me of cabbage rolls without going to all the trouble.

What I did make was very close to that. I did onions, mushrooms, ground beef, chopped tomatoes and salt and pepper. Then when cooked I added some grated cheese to the top.

It never ceases to amaze me of how easy and how effective this ***diet*** is!!
I have since re-gained a bit of weight, but that is soon to be coming off again!
