  • What's for dinner Monday?

    What's everyone having for dinner tonight?

    I'm undecided, we are either having leftover chili and a salad or leftover pot roast! I like to cook big batches of stufff over the weekend so I can just heat things up after work instead of having to spend a lot of time in the kitchen in the evening.

    I'm going to have some type of fish, havent fully decided yet. Maybe Salmon.

    It never ceases to amaze me of how easy and how effective this ***diet*** is!!




    I have since re-gained a bit of weight, but that is soon to be coming off again!

      Yum Rich, salmon sounds delish! I have started buying a type of white fish called Asian Basa. Its relatively cheap and John likes it (he's not much of a fish eater) I take it and sprinkle it with a little olive oil and a lot of basil and then top it with slices of fresh tomato and bake it - it is to die for!

          I bought two large chuck roasts at Sams over the weekend. We made potroast (with leeks and my NEW friend, Fennel) on saturday so Ive got one roast left. I tossed it in a baggie with soy sauce, a small ton of minced garlic, a dab of horseradish and some liquid smoke and its been marinating since 6pm last night. I will roast it nice and slow when I get home tonight. Will steam some broccoflower along side of it.

          (and now Im hungry LOL)

            Either baked porkchops w/a salad or stir fired pork. I'm thinking the baked porkchops because it's easier and their thawed out in the fridge

                LOL Mog! Im thankful that the BF is Italian and loves garlic as much as I do! I didnt have to explain why I needed TWO heads of garlic, 1 per roast. LOL

                  I'm recycling leftover roast chicken (had guests over last night!). I chopped the remaining meat last night, added some chopped onion and enough mayo to hold it together. When I get home, I'll form it into a couple of patties and fry it until heated through and golden brown.

                  I'm also recycling the leftover veggies. I'll simmer them with some chicken broth, then I'll puree it for a soup.

                    John is not italian ToC but he loves garlic too, so I'm lucky in that respect too! He actually peels and swallows a whole clove everyday!

                    That chicken sounds yummy Megs, I've never tried that!

                      I based it on a crab cake recipe, rather than using crab, I use cooked chicken. I might break an egg into it to help hold it together better.....

                        Going light tonight... just some cod cooked in wine and lemon with cherry tomatoes, capers and olives. Salad. Greek yoghurt.

                              Thanks. My godchildren were over on Saturday (I was the one enlisted to keep them busy while their parents shopped, wrapped and hid the gifts). Anyhow, we made a really interesting recipe so I'll post the results of that in a few days.
