  • Holiday meal ideas?

    Hey Guys. My mum and aunt are visiting me again this year for Christmas. I am TRYING to move (thats a whole other rant ) and so some of my stuff will be packed up and I refused to make our traditional chicken or ham.

    I have come up with Grilled lobster tails, filet mignon, and nice mixed green salad as a side. (dessert will be cheesecake with blackberries.).


    Problem, I want another side dish in there. My mom wont eat creamed spinach so thats not possible. My aunt is happy with corn out of a can which I refuse to serve with lobster. Mashed cauliflower isnt an option because theres no way my aunt would consider tasting it, let alone eating it. Gorgeous grilled asparagus is a no go as well.

    I want something simple, (doesnt require a babysitter), is elegant enough to serve with lobster and filets, isnt completely exotic so that my midwest family will at least recognize part of it.

    Im at the point of making asparagus for myself and handing the other 2 a can of corn and an opener.

    Sounds like surf & turf to me... throw some shrimp and coctail sauce to one side, and some tangering slices or cranberry jelly to the other... melted butter, garlic bread (for them)... a little garnish on the plates.

      What kind of veggies will they eat, other than corn? And where are you in your Atkins?

        Megs, Im on Legumes.

        They will eat carrots, broccoli, cauliflower, green beans, corn, celery, I guess you could say... "traditional" vegetables. peppers, mushrooms etc etc.


        Susan, we are having shrimp cocktail and crab cakes the night before. LOL. then again, as much as we love seafood and this is the only time they really get it, two nights in a row wouldnt be unheard of!

          Stuffed mushrooms? Don't have a recipe, I'm afraid...but I've seen recipes somewhere on the board for mushrooms stuffed with crispy bacon and cheese...

            Okay. you could do a vegetable medley. Slice carrots, broccoli stems*, green beans, red pepper and celery into a julienne of similar length. Lightly steam them (can be done the day before and store covered in the frig) and before serving, heat them in a pan with browned butter or olive oil and garlic. The vegetable medley will be colorful, elegant and fresh and light-tasting enough so as not to compete with the richness of the lobster and filet.

            For the broccoli stems, peel the tough dark green skin off. The inner stem is tender-crisp and sweet. SAve the crowns for something else.

                You can toss 1" pieces of zucchini with pepper strips (i like to use all the colours to make it look nice, yellow, green red and orange) and onion in olive oil and s&p. I cut everything in 1.5" pieces. Normally I grill this on the bbq on a foil pan but it will work just as well roasted in the oven.

                Two variations i have made that are excellent are: toss/marinate in itialian - or your fav oil based dressing, instead of olive oil. Or sprinkle with canned parmesan cheese (i do this close to the end). cut back on the salt if you do parmesan.

                  I would just grill some asparagus and other veggies for yourself(and however else wants to try) and open up a few cans of corn to make the others happy! Mummm lobster! Another idea is to take green beans and put them in bundles of perhaps 5 or 6 and wrap a slice of bacon around them and put that in the oven. Or put butter in frying pan, add mushroom slices, cook them, add cream. A delicious sauce for the steak!

                    what about a nice salad?

                    everyone I know loves this

                    just toss the following with lemon juice, olive oil fresh cracked pepper and some oregano
                    sliced red ripe tomato
                    roasted red, yellow, orange and green peppers
                    thin sliced sweet onion
                    calamata olives pitted
                    feta cheese chunked

                    I agree give canned corn person her own can of her favorite type of corn!!! Go all out and buy the best canned corn money can buy ... I would do that ..of course I would probably wrap it put a bow on it and put it on her plate but that is just me
