Ok I have a huge issue with holiday cookies...I do not eat many, but I bake a lot of them for cookie swaps and to give away. Even though I do not eat many...I eat at least one of each type as a control to make sure they come out as good as they are supposed to...I can designate the tasting but I can not designate the baking! I love it!...anyway I would love some low carb cookie recipes that do not include flax please!!!...they are going to have to have some kind of flour and that is fine...but most of all they have to be good!...anyone got anything?

Snickerdoodles
Ingredients:
1/2 cup butter
1 1/2 cups almond flour
1 cup artificial sweetener
1 egg
1/2 teaspoon vanilla
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
2 tablespoons artificial sweetner (I used Splenda)
1 teaspoon ground cinnamon
How To Prepare:
In a mixing bowl beat butter
with an electric mixer on
medium to high
speed for 30 seconds. Add
about half the flour, the 1
cup artificial
sweetenter, the egg, vanilla,
baking soda, and cream of
tartar. Beat
until thoroughly combined.
Beat in the remaining flour.
Cover and chill for 1 hour.
Combine the 2 Tbsp.
artificial sweetener and the
cinnamon in a small
bowl. Shape dough into 1
inch balls. Roll balls in the
AS-cinnamon mix
and place 2 inches apart on
an ungreased cookie sheet.
Bake at 350
degrees for 10 to 12
minutes.
Makes about 30 cookies.
Carbs per batch (including complete nutritional information if known): 44g carbs total 1.5 per cookie
These were really good :yummy Had to give them away after I made them, I only kept 4. My husband liked them too and he does not like anything low carb. HTH

Low Carb Luxury just put out their holiday issue, there are some yummy sounding and looking cookie recipes if anyone needs them for the holidays! Look out though, don't think they are induction friendly!

well I will try that snickerdoodle recipe for sure and thanks MOG for the link .....I have a recipe for almond hearts that are filled with jam I wonder if I use a sugar free berry jam and filled those...hmmmm...this may not be bad after all...I am not I repeat not giving flaxmeal cookies for Christmas!!!
