this is a cheap and wonderful soup for keeping those head colds under control
it does have a couple of tbls of bean paste but you could leave it out if you are not eating legumes yet ...however it is so good for you ...I wish you could eat it!!!

Korean Spinach Soup
1 package of fresh spinach washed well and spun dry
1 dozen small manilla clams scrubbed
1/2 lb ground beef
1 tbl dark chunky Korean style bean paste (if not available use dark miso or you can use a good beef stock cube of your choosing ..Knorr Asian beef style one is good..if you are not eating any legumes)
3 cloves smashed garlic (or more)
1 medium cubed diakon radish
1 block of cubed extra firm tofu (optional)
dash of salt and couple of dashes of soy sauce
1 bunch green onions cut in two inch long strips
2 tble of hot chile paste (use more if you like or use dried hot crushed chiles if no paste available)
6 cups water
over med high, on top of the stove ...brown the ground beef with the garlic, chile paste, cubed diakon and bean paste in a pot then add the water over the mixture stir well over medium high heat, when soup is boiling add the clams and spinach when the clams pop open add the green onion, garlic, tofu and soy sauce boil about a minute ...
if you want more heat ..and who the heck doesn't??? add a sliced jalepeno or two to the boiling broth
