heh. no comment but i did chuckle.

You need something acidic to marinate? If you mix everything from the recipe together and stick it in the fridge, wouldn't it be happy like that??

Well I always thought that the acidic ingredient is what tenderizes the meat and helps the flavor soak in...but I could be wrong.

Oh yeah I forgot the fish sauce. Got to have that for Thai curry. I am going to make some tomorrow night.

I dont want to hijack this with my own curry chicken recipe so let me just say ...I toss the spices I use on the chicken ..set it aside then saute my veggies ...add the coconut milk ...bring to a boil kind of then toss the chicken in ..

I use Betapac or Carispice curry ..but any good madras curry is fine and I about triple the amt suggested ...

            Re: Curried chicken w/Coconut Milk

was just pondering if I could still make my thai chicken curry. I guess coconut milk is okay then. I will have to check the ingredients on the thai red curry paste to make sure it is legal. But I use chicken, usually left over from a whole roasted bird, red peppers, onion and thai basil (regular basil works well too), and the coconut milk. It is really yummy.
I'm thinking that coconut milk is an OWL food, but not sure what rung it falls on, i'm quite sure it's not induction friendly if this is where you are. Can anyone confirm?

I've heard others say that it's induction friendly, though personally, I would think since it's a nut milk, it would be Rung 3.

This works really well. And if you're worried about missing the coconut flavor, you can add a 1/4 tsp of sugar free daVinci coconut syrup. Just a smidge though, because you don't really want your curry to be very sweet.

I just made this in a pan, i cubed a chicken breast and sauteed with onion, added a veggie mix of cauliflower, green/yellow/red peppers, zuchinin, and the curry and cream. I used a couple of drops of coconut extract to the cream in place of coconut milk. It came out amazing!

                        YUMMY!

I've had a curry ONCE before in my life, and it's such a unique flavor make-up, I can't believe I've only eaten it once.

I made this today for lunch and it was really good! I cubed chicken breast, sauteed it with a shallot and garlic, and added the coconut milk, bullion, and curry. I put some napa cabbage in with it to be daring, and it was pretty good with the cabbage...but I ended up not eating most of the cabbage (Heidi, I tried valiantly again to like cooked greens...I figured collards were maybe too much, napa cabbage would be ok...at least I tried!) and I just ate the chicken and the sauce which was DELICIOUS! I also made some garlic/onion flax "naan" (yeah right, it was nothing like real naan, but it still tasted good!) to soak up the sauce.

YUM YUM YUM! Thanks for this recipe!

Heidi, I have looked at the list many a time. I am still finding new stuff to like in new ways. I think the napa cabbage will be excellent raw--I'm going to chop it up and make some sort of salad out of it--I was just giving "cooked" leaves another shot. I haven't tried fennel yet--it's actually on my list to buy. I live in a small place, and they don't even sell it here. So I'm waiting until we go shopping in "the big city" next week to purchase some.

My problem is that I don't know too much about curries. What are some good veggies to put in one? Oh, and I couldn't buy curry paste, so I used curry powder. Yes, that's probably a major sin.

the curry paste is more for SE Asian style curries that are totally different than the Indian curries ...I posted a thread for Thai curry and found you can buy the curry paste online...no powdered curry is not a sin I use it all the time ...it is a spice as long as there are no fillers in it you are fine ....the world is full of curries let me get my link for you to check out when you have time brb
