    well the recipe calls for the coconut milk to be in the sauce ..I put about 1/2 cup in to the meatballs and have as you can see ...no sauce...I imagine if you make them like the recipe says and put all the ingredients in the sauce instead of inside the meatballs they would be really fantastic...however they are really yummy this way as well!!! I have enough left over for lunch today when I heat them at work ...I am sure I will have to share

        My dinner is so much less exciting than Heidi's, but I'll share anyway.

        I'm doing a roasted butterflied whole chicken with onions, mushrooms, cauliflower, red peppers and potatoes for hubby. I rub the chicken down with olive oil, sea salt, pepper and rosemary, and drizzle olive oil over the veggies.

          tonight it is going to be a pork shoulder roasted Cuban style for 4 hours after marinating in Mojo

          I am thinking jicama/chayote (those are cheap and plentiful right now!!!) salad with lime ..sour orange ...chile ...cillantro ..maybe some mango tossed in so I can put some salsa music on ....maybe a mojito? ...close my eyes and imagine I am in the Caribbean?
