  • I need some cooking tips

    So I just tried to cook califlower. I boiled it and then mashed it with some cheese and butter...for some reason it came out watery...hmm maybe I just am not a califlower person. I just want to know what good sides I can have. I am kind of confused about the portions as well??? And you can only have 2 tbs of cream or sour cream a day?

    Try steaming the cauliflower and then making sure it is not wet, either by patting it down with a paper towel or putting at back in the steamer without water and turning the heat back on just for a bit to dry out, then mash with butter and cream or cheese.
    Yes the portions are small for cream cheese and cream so use them wisely.

      You want to let the cauliflower drain before you mash it or shred it.

        I actually press the cauliflower in the sieve to get all the water out (i put paper towel over it and press down over the sink). You need to drain it very well before mashing.

          Something else you might try is roasting the cauliflower. Cut fresh cauliflower into 4 large chunks, cover tightly with alum foil and roast for 10 min at about 450 degrees. Remove the foil and roast another 8-10 minutes. Then you can go ahead with the rest of the recipe or whatever. This keeps it from getting mushy and also gives it a great texture and concentrates the flavor over boiling/steaming method.

            I shake the cauliflower in the drainer thing to get all the water out. Also you really need to decide how much butter, cream, etc to use based on size of the cauliflower. There can be a big size difference and that does change the result of fauxtatoes.

              Don't throw away that watery cauliflower! Put it into a pot, add alittle chicken broth, simmer it until hot and you'll have a super-yummy creamy cauliflower soup for lunch or dinner tonight!
