I love stuffed burgers. If I don't grill or pan fry them, I bake them in the oven sorta like stuffed meatloaves.
The almost foolproof way I've found for stuffing burgers without the filling oozing out is this: Divide the ground meat into 1 burger portions. Divide each portion in half. Flatten one half into a patty, and build a slight rim on the edge. Put the filling on the rimmed patty. Then flat out the other half. Place on top of the filled patty. Press the edges together to seal. And there you have it: a stuffed burger.
I like simple stuffings:
Cheddar cheese + chopped jalapenos
Parmesan cheese + sliced sun-dried tomatoes + basil leaves
Swiss cheese + minced ham
Swiss cheese + drained sauerkraut
Ricotta cheese + drained chopped spinach
Any other stuffed burger fans?

I'm opting for the parmesan/sun-dried tomatoes/basil. Well... where I am, these are standard "always-have-on-hand" ingredients! Yummmmm.... drooling already and it's only six o'clock! (we eat around 8.30 here).
