  • Confusion about chocolate in DANDR chocolate truffles

    Hi,

    I've searched by couldn't find an answer to this question:

    I am going to make the Chocolate Truffles recipe from DANDR, p. 486 of my copy.

    It calls for 225g bitter chocolate - this confused me. The bitterest chocolate I could find is 73% coco solids but it also contains sugar. Is this what the book means? I was surprised - I thought Atkins was totally no sugar ever.

    Any thoughts appreciated.

    In the US book, the recipe states "unsweetened" chocolate. I guess whoever did the translations changed it to bitter chocolate.

      Hmm, that's strange - I don't think I've ever seen unsweetened chocolate in the UK.

      I'll have a search.

        there is a brand here called Bakers that makes an unsweetened baking chocolate.

        for a high end chocoate, Lindt, a swiss company makes a 99% cocoa bar that is to die for (there is a tiny bit of sugar in it..less than 1%).

        If you can't find it, I would suggest you do a search through this site's truffle recipes for one that uses unsweetened cocoa rather than chocolate. I use Fry's cocoa which i believe is a brittish product.

          Thanks Sadie - yeah, I've definately seen that 99% Lindt somewhere, I'll check it out!

            If you look at the lindt nutritional info on teh back it is for the whole bar and there is 1g of carbs. I usually have 1/4 of the bar (i microwave and add my own sweetener..better than having sugar alcohols!), I figure teh carbs are pretty much non existant as the bar is quite big and pretty rich you can't eat much.

            I would think in the uk, the land of awesome chocolate they'd make unsweetned!

              The UK is the land of awesome chocolate? Most europeans would disagree! There were plans to call UK chocolate 'chocolate flavoured confectionary' under some EU law because the coco content is too low...or something

                  Do you not get maltesers in the US? (if that's where you are Grant?)

                  If not, then that's a shame - they're gorgeous! In a pre-Atkins way obviously!

                    They don't have smarties in the US either! well they do but they are a candy, not the coated chocolate ones that we get.

                    I love brittish chocolate, when I was in Ireland when i was a teen I brought home an entire box of flakes (about 200 in the box) . I don't konw if it qualifies as 'real' chocolate to a expert, but it's the creaminess of it that I love. The Cadbury's chocolate we get here doesn't even come close. We have specialty stores here that actually ship Brittish choclate in and charge a fortune for it.

                    If you do come accross the unsweetened baking chocolate, I made this truffle recipe over xmas, sweetening it with sweetener and it was amazing. http://www.joyofbaking.com/ChocolateTruffles.html

                    there are actually a few chocolate torte recipes, pumpkin pie and cheese cake recipes that all low carb very well on that site. I have made them all and they have been awesom.

                      My mother in law brought some malteasers back from her trip to the UK a few years ago, I'm really glad I can't find them here as it would be a temptation for me now =)

                        they have unsweetened baking chocolate in the UK I know they do!!!! I buy it when I am in the Caribbean and it is very good!!!

                        just ask the grocer to show you ..it is in the baking department right next to the cocoa powder!

                        malteasers are just like our malted milk balls we have them here and they are very tempting!!!! I do however appreciate Brittish chocolate ...or have appreciated it very much!!! my favorite however is Belgium chocolate!!!

                              Giving up Maltesers has been the hardest thing for me! I always had them when I went to the cinema - so I felt really down about not being able to have them. Now I take a little bag of cheese with me! On advantage is no one wants to share!

                              Sadie - I've printed that recipe out. Thanks, it look gorgeous. Knowing I can customise my favourite stuff like this is really helping me to think of this as long term.

                              HeidE the store nearest me doesn't stock it - I'll have to venture further afield...but am happy to hunt it down - I'm a chocolate fiend too!
