  • Thai Curries .Red, Yellow or Green? lets chat!

    I went to the coolest SE Asian Market yesterday and bought all three kinds of Thai curry paste ...ok you know me I hate processed foods ..and I do make my Thai curry pastes from scratch ....but have for the past couple of years loved using the Green Curry Paste in plastic containers..it has no fillers no added sugar and it is really good tasting!!! So I thought I would venture out a bit and try the Panang (red) curry and the Masaman (yellow) curry ..in the containers as well ...same thing there are no fillers or added sugars of any kind ..this is kind of exciting for me!!! I hope they are good ..

    have any of you tried these?

    what of the three most popular Thai curries do you like the best (my favorite depends on the day and who made it I think but when I go out I will order the green almost every time)

    tonight I am using the red Panang curry paste (this is my standard technique for making Thai curry if you have a better way please tell me!)

    I am going to stir fry the following veggies (you can use any stir fry veggies you like for this)

    in a neutral oil (canola is what I use but if you use coconut oil I bet it would be awesome!)

    1 jicama cut up
    3 stalks celery sliced
    1 chayote
    1 red pepper
    1 fresh bamboo shoot sliced
    1 yellow onion

    then put in to the mix

    1 package of boned chicken cut into bite sized pieces...(I bone a whole chicken at a time ..but then I like to see where the parts come from ) but you could use a package of preboned chicken of your choice

    1/3 cup of this Panang paste saute it around the chicken and veggies then add 1 can of coconut milk ..

    bring it to a boil and taste ...you want more curry flavor .. add more paste to it now ...

    then last but not least add the fish sauce about 3 tbls is good

    couple of things about fish sauce..it smells gross ....even the good stuff and I highly rec you try a fish sauce made in Phu Quoc (that will be the name on the label) ..it is Vietnamese style and goes great with Thai curries...it is not as stinky ..it is from an island in Vietnam that does nothing at all but make fish sauce ..so they do it right!!!...please do not be turned off using it because of the smell!!! the flavor it puts in SE Asian cooking ...well you just have to do it to know...

    then right before serving ...toss in a handful of fresh basil and a squeeze of lime juice (if you are lucky enough to have keffir lime leaves or a lime tree and you can pick the leaves use a hand full of them chopped up)

    serve

    so share with me your Thai curry tastes/ideas/methods please...tell me I am not alone?

      ok here is the curry paste I am using ...I just tasted the sauce and let me tell you ..this is awesome curry ..very low carb (I did not count) ....it cost me less than one entre' out to make enough for 4-6 people .... so I am hooked up for lunch tomorrow even if my coworkers steel from me (and they will trust me!!!)
      I guess you can buy this stuff online now! ..but if you can go to a market it is more fun

          Heidi, I love curries, but I haven't tried making one with curry paste at home. I've done some pretty timid curries with the powders... and I haven't cooked with fish sauce yet. I have a pretty brave palate though and I love Thai food that other people have made for me, so I bet I'd like this...

          I'm a real newcomer to doing any sort of SE Asian cooking or Asian cooking in general, so I don't have a lot of my ideas at all yet (sorry!), but I wanted to pop in and let you know that your recipe sounds fabulous and that I plan to steal this idea to try... my husband's a little iffy on jicama, so I'll probably sub something else. Probably pea pods.

          I'm really lost as to whether I should try green, red, or yellow curry paste first... you said you used the green for years, so maybe I will start with that.

            go to a Thai joint and taste the curry there first ..just order it ala carte and see if you like it ..although I can not imagine you wouldn't

            I will be so excited to hear how it goes....the red I used last night was much milder than the green ..the green has more heat I think ....

              I made the red curry tonight!!! It is wonderful! Thank you so much!

              I used zucchini, mushrooms, and onions for my veggies... I can't believe how easy this was and how good it tasted. I love coconut milk too... it's just wonderful.

              And I have so much chili paste and fish oil leftover or next time. This would be awesome for using up whatever veggies I have kicking around in my fridge.... I want to try even doing this with shrimp and a few cashews....

              I had no idea it was so easy to make a curry! It filled me up so much too... and unbelievably, unspeakably delicious... I loved how spicy it was, and also that I was in full control of the heat.

                I hope sweet girl you can feel my joy clear across the country ..I have no way of expressing how good this is ..how easy it is ..and how tasty it is ....the fish sauce and curry paste last forever I have used seafood....pork ....(beef is kind of ick) chicken prawns ..even a solid fish like cod is good with this ....I want to hug and kiss you right now!!!!

                this kind of food saved my asss on Atkins!!! so rich and fun to eat ..it satisfies everything ...and very good for you!!!!

                ps I took a pot of it to work with some jasmine rice and people were freaking out at how good it was ..there was not even a drop of sauce left

                did you make the green? you have to find and make the Panang now ...YUMMMMMM

                  Hahaha... I have only made the red... I want to try others too... and I should try to get the good stuff, the Panang...

                  I want to try them all!!! My mind is reeling with all the possibilities of things I could put in my curry!

                    Mae Ploy makes all the types of Thai curry the red, yellow, green and panang so look for them!

                    the thing about any curry is the technique it is like painting I think ..once you get the hang of it you can do whatever you want to make it suit your mood...I can honestly say I have NEVER made the same curry twice....

                    next I will get you hooked on Malaysian curry ...now that is some insane stuff ...mix the best of Asian with Indian and tropical flavors ......omg....be still my beating heart!!!!

                    soul food that is what curry is ...

                    all over the world there are wonderful curries ....I feel it is my obligation to taste each and every one before I die

                    I have a great Fijian curry you can make from ..get this ...a bag of frozen mixed veggies!!! Cheap and good ...

                      Yellow curry is my favorite Thai curry type (although Green and Red are fantastic as well). I am also a notorious curry fiend. I love curry on my eggs, on meats, etc etc. Today we're having a leg of lamb... rubbed in curry. Soooo delish.
                      Japanese style curries are good too but a little less exciting for me. I love Indian curry and Thai curry. It's no wonder that Indian food and Thai food are my favorites.
