  • chicken guts--what the heck do you do with them???

    When we had dogs, I would just feed them the chicken heart, liver, gizzards, and whatever else was inside each bird. Since we've been dogless the last couple of years, I feel guilty just throwing the guts...gibblets...innards...whatever you call them, away.

    I save the neck and the backbones in the freezer and then make stock out of it, but I've always been told not to use the gibblets. My DH says that he used to eat the chicken heart when he was little, but he doesn't know how his mom made them & she's not around anymore to ask.

    So, what do you do with them?

    We eat them here...boil them with the necks and backs and then dice them up really small and add them to gravies and such. In the south, we also eat them deep fried. I, personally, have no problem eating any of the giblets.

      We make patè with the liver here. Or you could make stock with all the innards... and with the carcass, after it's been cooked and eaten.

          I've been giving the stuff to my dog because I don't know what to do with it. I couldn't find a recipe. If I knew how to make chicken liver pate, I would.

            I put them in a crab trap catch and eat the crab ..then I throw the guts away

              Thanks for the imput!! I'll try just about any recipe once.

              If I deep fry them, do I have to use a batter???

              I've had pate in the past, but I think it was made out of duck or goose livers. It would take a lot of chickens to make a serving. I'll see if I can find a recipe for one.

              No crabs in Kansas, at least, not the kind you find in water. If we end up not liking the giblets, maybe we can use it as fish bait?? hmmmm...

                  Only thing I wont eat is the liver (YECH). otherwise, I put the heart and gizzard (well washed and trimmed) in with the bird when roasting and then snarf them down.

                  To prepare a package of hearts and gizzards, Rinse well. Trim the gizzards and wash them very well (this is the organ in the chicken that grinds up corn etc so its important to trim it well, think Chitlins here.). anyway, once well trimmed, place in a small casserole dish (I find that a 1 qt is plenty large enough for one package of goodies). add a little water (couple tablespoons) and cover. I typically cook these at about 250 and just keep an eye on them. Once you get these cooked, you can make a pan gravy with the drippings and al ittle xantham gum and some heavy cream.

                  and Im not eating the liver out of ANYTHING and refuse to entertain the thought.

                    I love chicken livers! I found that you have to clean them (and other livers) really well in order to remove that slightly bitter taste. I rinse them, then soak them in water with a little salt, changing the water several times until the soaking water is only slightly pink tinged.

                    Anyhow, I saute them with garlic and onions (if I have chicken gizzards and hearts I add them to the saute too). To that I add alittle tomato, maybe about a tablespoon or two of tomato puree or a medium tomato, chopped. Then I let it cook gently. Season with salt, black pepper (and a bit of hot pepper--if I have it).

                    I have read a recipe about using chicken livers to make a 'faux' foie gras or foie gras pate. Haven't had the opportunity to try that out yet.

                        Dirty Rice!!!

                        Instead of white rice use cauliflower OR even better...broccoslaw (stirfried with these ingredients) if you are on maintenance, you could use the brown rice.

                        INGREDIENTS
                        • 1/4 pound chicken gizzards, rinsed
                        • 1/2 pound chicken livers, rinsed and trimmed
                        • 1 tablespoon vegetable oil
                        • 1 onion, finely chopped
                        • 3 cloves garlic, minced
                        • 2 cups uncooked white rice
                        • 4 cups chicken broth
                        • salt to taste
                        • 1/2 teaspoon ground black pepper
                        • 1/4 teaspoon cayenne pepper
                        • 1 cup thinly sliced green onions
                        DIRECTIONS
                        1. Pulse gizzards in food processor, then pulse livers.
                        2. Heat oil in a large saucepan. Saute onion and gizzards over medium heat, stirring constantly, until meat begins to brown (about 5 minutes). Add livers and garlic and cook, stirring constantly, until brown (about 3 minutes).
                        3. Add rice and stir until coated with oil. Add broth, salt, pepper and cayenne pepper. Bring to a boil, then reduce heat to simmer. Cover and cook about 20 minutes, until rice has absorbed liquid. Sprinkle with green onion and serve.

                          We like iron sybil in our family. Not sure if it's an acquired taste or not You take the livers and cook either by saute or in the oven on a piece of tin foil with it on "broil" then you chop them up with a hard boiled egg and some onions. I used to eat this on matzah but of course that won't work anymore! SO now I just eat plain lilke a "salad" and it's pretty good.

                            I'm not at goal yet, but my DH is. He can eat the dirty rice dish.

                            When trimming gizzards, what are you trimming?? I don't recall seeing excess fat on it.

                            I will be buying another whole bird in a few days. I think I'll try the soaking method, followed by the saute pan with onions and garlic. DH is VERY excited about trying the heart piece again. I'm leary about organ meats, but I'm willing to give it a try. If I can get over my fear of veggies, I can get over this...maybe.

                              Dana Carpender's 500 more Low Carb recipes is where I learned about using this recipe in a low carb way. She's the one who recommends using the bagged broccoslaw instead of the rice. My DH *loves* it, but I neglected to tell him that it has liver and gizzards in it. What he doesn't know, doesn't hurt him.
