    Heidi, thats EXACTLY why I refuse to eat liver. I know what it does in the body and I am not even considering it. And I dont want to discuss kidney either! LOL

    Biogeek-what I trim is from the inside of the gizzard itself (the inside is that rough funky skin kinda feeling stuff. Anyway, I trim the edges off of ot and make sure theres nothing funky looking on it.

      It's been years since I made it, but I seem to remember that you sautè onion, garlic and a little chili pepper (if using powder add after the wine) in olive oil... add some wine and a couple of FRESH sage leaves, then the cleaned chicken livers. Cook until done and add enough butter to firm it a little when cold. Blend until not quite smooth. Put in a pot and refrigerate.

      It's not a "real" patè but that's (vaguely) the way they do it here... and then spread it on crostini (toasted bread) for antipasti. Not sure what you could use instead of the crostini though .... don't think it would be much good on grilled veggie slices.

        Tired of Chub--I think I made a terrible face when I read your post b/c my co-worker just said to me, "What's the matter with you?" LOL I told her what you wrote & I thought she was going to faint. As far as what the liver & kidneys....yeah, I have some reservations about eating them, but I've heard that they're a great source of protein. I recall Dr. Atkins mentioning that he enjoyed organ meats. If the good doctor can stomach it, why can't we?

        Sally, I think I would spread it on flaxseed "bread". My DH will like it.

          OMG I lied!!! I eat gross stuff too!!!

          I love menudo and it is full of tripe and I love that dim sum steamed tripe Jen loves so much !!! that is kind of gross actually!!!! I eat stomach lining!!!!

          I think the fact it is does not look like bloody organs do ...kind of makes me feel better...

          such hypocrisy !!!

          if we eat butts and legs and all kinds of other parts ...and just because we know what a liver does...hey I love crab and it is a scavenger !!!

          Bio ..Tired anyone else who has not I should dare us to eat liver

          throw caution to the wind ..forget what we know ..and lets take a bite of liver....what if we like it??????

            Ok if I am going to try liver what should I do to it so it looks like food other than pate or that kind of thing? and I can not puree it I am sorry ...I dont puree meat ...ever ....

              Heidi, you can have MY portion of liver. my mom used to makei t when I was a kid and the smell was enough to drive me out of the hosue. I did try it more then once as a kid and I cant cut it. My mom was thankful when I left for college, they could have liver regularly instead of making sure I was gone for the night. (The smell makes me gag).

              I will fully admit that I LOVE me some beef heart. roasted with a little water in a low oven.... YUM. little salt and pepper on the finished product and thats all ya need.

              Heidi, youmention eating butts.... I remember my paternal grandmother ALWAYS getting the tail of the chicken. "last part over the fence".

              Also on my list of "oh heck no"- chitlins, trotters (feet), tongue, brains and god knows what else.

                Heidi-I remember that not2late said that she ate chicken liver omelets when on induction(a poster was asking what you should eat on induction and she mentioned this). I remember because reading that made me throw up a little bit in my mouth. I tried chicken liver patè before and YUCK! I just do not like pureed meat. I hope that no one here would eat goose liver patè. Do research please! The poor bird is miserable before the death due to what it is giving to make the liver as big as possible. *shudder*

                  Maggie, I don't think too many animals are treated kindly before they're killed so we can eat them. Some may be more extreme than others, but...
                  did you know that many pigs die in the back of a truck when they're being delivered from the farm to the slaughterhouse because they're crammed in the back of the truck so tight that they can't breathe and they trample eachother. Some animals are thrown in boiling vats of water while they're still alive. Chickens feathers are sometimes plucked from the bird while it's still alive.

                    Chopped liver is a great treat. I love that stuff---especially if it's made correctly: with caramelized onions sauteed in alot of chicken fat!!!! I not a fan of chopped liver that's a smooth puree---yuck! But I like it if the mix is alittle chunky. During Induction, I found that chopped liver went well with Belgium endive (AKA Witloof endive) or jicama or even sweet red peppers. It made a nice breakfast because you had a protein, fat and a veggie.

                      Heidi--all is forgiven! very funny, though! Menudo? Isn't that a singing group from the 80's?? Got a recipe for menudo? I've seen tripe at the store, but I always pass it by. I'm game to try it.

                      Please keep those ideas & recipes coming!

                        I think I will try wrapping a chicken liver ..the next time I see one that is!!! in bacon and putting a waterchestnut inside that is an appetizer I have seen here before ...

                        as far as menudo goes or cooking tripe ..I have tried but it really smells so freaking bad to prepare it that it is the one thing I order out!!! Let the experts do it ..so I have it when I go eat dim sum or have them put it in my Pho ...or have it when I go to a place that makes Menudo from scratch once a week and know it it really good..you can try to make it ..but be prepared to OPEN YOUR WINDOWS!!!

                            I think I posted one on the board sometime but it takes a billion ingredients to make the stock right so I only eat this one out as well ..lemme see if I can find it for you Phode

                              OK, I can live without the recipe if it's a million ingredients, but...lemme ask you this. When you eat it out, do you skip the noodles, or do you eat them because you're on maintenence? I ordered Pho from a local pan asian type place. I thought it was really good. They served fresh mint and jalepenos on the side, and I didn't really know what to do with it, so I threw it in the soup and ate it up. The mint was a little intense, but otherwise, it was good. I ordered mine without noodles, and asked for extra veggies.

                                What is Pho????? I don't mind a million ingredients so long as I have them & they're in order.

                                Maybe tripe is something that I can cook outside? My mom is Korean & she cooked a lot of stinky things...how bad can menudo be to that?
