    Pho is a Vietnamese noodle soup (or is it Thai?) anyhow it's a SouthEast Asian noodle soup.

    With tripe, you need to really clean it well in order for it not to be "stinky". Alot of people just rinse it with water. But I got a really great tip from a friend of mine: you rinse it in water, but you also rub salt on all sides of the meat (kind like you would do when you use one of those apricot scrub things for your face/body) and rinse the tripe in water. You might have to repeat with the salt scrub.

      Pho is THE soup of Vietnam it is made with a complex beef stock bones spices and all kinds of thing I have a recipe I just have to find it!

      Pho is served in a huge bowl with very sliced rare eye of round beef (or various other parts of beef like meatballs tripe brisket whatever mix you like) noodles (but you can ask for them to hold them)

      they serve it with a huge plate of bean sprouts (I have them steamed and they are my noodles) fresh basil leaves, lime and jalepenos ..you add what you like to this huge bowl of wonderful stuff and eat with chop sticks and a spoon

      I have had duck pho ..huge pieces of lean bbq duck in a duck stock served with cilantro chiles and lime and it to die for!!!

          Miss Phode-I buy the animals I consume directly from the farmer(same thing with my cream, milk(for kids), butter, etc. I am aware that animals are often not treated well before they are turned into food. The goose liver thing is really extreme. There is always a big campagne against it every December in Belgium(it is a big food eaten here at Christmas). I'm very well aware of the fact that I have likely eaten meat where the animal was not treated decently beforehand. However I TRY not to. Ah, hope you understand what I am trying to say. I mean if you are going to eat meat(because your body needs it to be healthy) then wouldn't you want to eat animals that were treated in a decent way before death?

          BTW I have zero problem with chicken liver patè. It is gross though!

            Meg, if I ever get brave enough to cook tripe, I'll try your salt rub method.

            Maggie, some of the large cities in the USA have outlawed restaurants from serving pate b/c of some of the inhumane practices to yield large goose livers. Chicago comes to mind as the most recent city.

              Bio-that is great that some cities have done that! I wish it would happen here more. I must admit I never tried it but a lot of Belgians cannot do without goose liver patè. I am going to tell my dh about what some of the larger cities in the USA have done. He will be very happy to know that.

                  I have mixed feelings about frois gras ....I am all about avoiding animal cruelty trust me ..but ...we are cruel to them here in the us

                  that is why I try to only buy from local folks ..where I have seen how they butcher and handle the animals first hand .
                  I do buy from halal and kosher butchers as well ....some folks think that style of butchering is cruel but compared to big industry ..each animal is considered prior to its demise ...
