    Another lettuce-free salad:

    Raw Stir-Fry

    1 cup each:
    red bell pepper, thinly sliced
    green bell pepper, thinly sliced
    snow peas, sliced into strips
    bean sprouts
    chinese or regular cabbage, shredded
    carrot, thinly sliced (not okay for Induction and can be left out completely!)

    Dressing:
    1 inch piece of fresh ginger root, finely minced
    1 teaspoon salt
    1/2 teaspoon ground pepper
    1 tablespoon toasted sesame oil
    2 tablespoons light tasting olive oil or a bland oil like canola
    2 teaspoons lemon juice or rice vinegar

    Mix everything together. Can be made more "substantial" by adding cooked chicken, beef, pork, shrimps, etc. or tofu.

      And another one:

      Sprouts, Avocado, Tomato Salad

      1 cup of alfalfa sprouts (or broccoli sprouts, radish sprouts, etc.)
      1 or two ripe tomatoes
      1 avocado, sliced
      2 sliced bacon, cooked and crumbled into 1/2 inch pieces
      1/4 cup mayonnaise
      salt and pepper to taste

      Toss the sprouts with the mayonnaise and set aside.

      Slice the tomatoes in half, through their middles (so you have a top and a bottom).
      Put one tomato half on a plate, cut side up. Sprinkle with a little salt and pepper. Top with 1/4 of the sprouts-mayo mixture. Top with 1/4 of the avocado slices and 1/4 of the bacon pieces. Repeat with remaining ingredients.

      Serves 4.

        we love baked NOTATO salad - using a head of steamed cauliflower - break into lots of small clusters (bite size) and put into a casserole dish. Add to that, 1/2 cup of mayo, 1/2 lb of fried crumbled bacon, 1/2 cup sharp cheddar cheese (it's better if you shred it yourself) 1/2 tsp onion powder, 1/2 tsp garlic powder - sea salt and crushed black pepper to taste - mix it all together in your baking dish - you may add chopped onions if you like, but to save on carbs, I top with a few slices of green onion and bake at 350 for 25 minutes. It's quite YUMMY!

          *drool* I am doing this one tonight. I already have all the ingredients and I'm running a little light on carb grams so off I go!

          edit to add: I love you Libby!! This was just delicious! Dangerously so, I could seriously overeat it. My kids liked it too, so I only have three portions to store instead of five.

            Mother in law brought down a rice salad with marinated artichokes, red bell pepper, asparagus, mushrooms (very few of these), cubed chicken, green onions in what appeared to be marinated in Italian dressing mixed with reserved marinade from the artichokes. I was thinking, would it be possible to do this with shredded cauliflower if you let it marinate long enough? Served as a cold salad of course. Where's Linda for a conversion?

                I know you could do it with cauliflower!

                I had a roommate who used to make marinated veggies (cauliflower, broccoli, carrots) and she'd place them in a bag with Italian dressing for 2 days, I believe. After that time, the veggies had softened like they'd been cooked and were infused with the flavor of the dressing.

                I would marinate the cauliflower first, and then add the other veggies to marinate later.

                  Well, folks, I went to the library yesterday and borrowed a boatload of cookbooks (as usual!)

                  Here's another non-lettuce salad. Omit the carrots for Induction, of course. You use equal amounts of diakon radish, cucumber and carrots, thinly sliced into half moons. So you peel the daikon radish, cut in half lengthwise, then slice into thin half-moons. Same for the cucumber and carrot (if using). Put the daikon and cucumber into a colander and toss with a teaspoon of salt to remove excess moisture. Set aside for about 15 minutes. Then rinse the vegetables in cold water and squeeze as much moisture from them as possible. Toss with the carrots. Then toss with a dressing made from toasted sesame oil, chopped fresh ginger, soy sauce and rice vinegar or white wine vinegar.

                    I saw this in a cookbook yesterday and had to make it! I had to make some substitutions and I cut a corner or two, but I'll include what I did below the real recipe.

                    Asian Snap Pea Salad (from The Ultimate Cookbook by Bruce Weinstein and Mark Scarborough.)
                    8 servings

                    2 pounds sugar snap peas
                    1 1/2 tablespoons toasted sesame oil
                    1 1/2 tablespoons rice vinegar
                    1 tablespoon peeled, minced fresh ginger
                    1 teaspoon soy sauce

                    Remove the strings from the snap peas by breaking off the ends and pulling down. Bring a pot of water to a boil. Drop the peas in and bring back to a boil. Simmer 2-3 minutes. Remove and put into ice cold water to stop cooking. Drain in a collander to room temperature.

                    Toss with the remaining ingredients. Serve at room temperature.



                    I didn't have fresh sugar snap peas, but I had a package of frozen ones. So I defrosted it by emptying the package into a collander and running cool water over it until the peas were defrosted. Then I mixed the peas with the remaining ingredients. I also added a sliced green onion. Very, very, very good and very, very, very easy.

                    If you like Asian flavored foods, this side dish is for you!

                    I'm sure you can substitute blanched green beans, cooked asparagus and cooked broccoli/cauliflower for the sugar snap peas and it will be equally delicious!

                            Made the cauliflower "potato" salad for July 4th.

                            People loved it!

                            I used celery, green olives, egg, mayo.

                            Can't wait to try the other recipes here.
