  • Chicken Wings!

    I ran to the library during lunch break and borrowed The Frugal Gourmet cookbook. He has a section on chicken wing recipes, including Buffalo Wings. I still have to look through the book, but I'll post a couple of recipes when I get the chance tomorrow.

    In the meantime, post your favorite chicken wing recipes. And yes...I realize there will be 1001 variations on Buffalo Wings.

    Bake the chicken wings and mix with Frank's Red Hot sauce and Butter.

    This is what I'm having for dinner tonight and I can't wait!! Yummy.

    I'll serve it with celery and jicama and blue cheese dressing.

    Oh I can't wait.

      I mix up a bottle of hot sauce, and 1/2 a cup of italian dressing, 1 egg, & cayenne pepper and marinate the wings overnight, and then bake them. The egg seems to make everything "stick".

        Has anyone tried to fry their hot wings and then spin them in they're sauce of choice when they're done? They're very crispy, which is how my DH likes 'em. For him, we actually use a sauce from Buffalo Wild Wings called Jamaican Jerk. It's hot & spicy! mmmm. I don't eat it b/c it does have sugar in it. I'm still hunting for the perfect recipe.

            Oh and yes in order for them to be REAL you have to deep fry them first...another thing is ..before deep frying you must brine them for10-15 min in a bowl of cold water mixed with about 1 1/2 - 2 cups kosher salt to 1 gallon of water..then dry them completely ...when they are about room temp ...deep fry the snot out of them until the skins are really crispy ..then toss in the sauce...and put in a 200 oven ...so the sauce sets on the crispy wings...

            this method is direct from a bartender I know from Buffalo btw so it is the real deal

            my sauce however is just fantastic...not authentic ..

              I fell asleep early last night so I wasn't able to look at the recipes thoroughly. But Frugal has a few recipes for baked wings. One is similar Phode's recipe: marinade in a salad dressing (he used a Fennel salad dressing which sounds good), drain, put on a baking sheet, sprinkle with herbs and parmesan cheese, and bake. He also has a recipe for Chinese steammed wings and a directions for a baked version of it. And of course the Buffalo wings.

                I've worked in 2 different Buffalo bars for about 6 years making chicken wings and the original method is still one of the best. Deep fry em, throw them in a bowl with butter and hot sauce- adjust for heat- flip em- that's where the real skill comes in- being able to flip them without losing any out of the bowl- and throw them on a plate- hot and saucy right out of the bowl. Don't waste time with tongs or any of that nonsense- just slide them right on the plate.

                  I go by the same method as Joy, yumm, baked or fried.

                    Frying is the authentic way to do it, but baking it seems easier because you toss the whole thing into the oven and you don't have to stand around watching it.

                    Anyhow, Frugal flavors the Steamed or baked Chinese-style wings with ginger, soy, and garlic. Mixes it up and either steams it or bakes it. I might try baking this recipe, because it would be a change from the spicy wings.

                    The Fennel dressing is just a vinaigrette with 2 tablespoons of crushed fennel seeds added to it.

                      these are great too I think
                      and NOT an exact recipe

                      Korean style wings
                      1 2 inch piece of grated ginger
                      1 bunch of chopped green onions
                      1/2 cup vinegar
                      1/4 cup sherry (leave off if you want)
                      3 tbls of toasted sesame oil
                      6 fat cloves of garlic smashed
                      1/2 cup soy sauce
                      hot chile powder today (prefer the Korean style hot pepper if you can find it but any will do)

                      this is your marinade mix together well
                      and you can put it and your wings in a bag and let them soak over night ...then drain well and set your oven to about 425 convection roast is good if you have it ...cook them until tender and sticky or even better on a low grill turning constantly

                      garnish with

                      3 tbl toasted sesame seeds
                      minced green onions
