oh my god I can not recall who gave me the idea but I want to say thanks! I am on nuts now and last night I ground some almonds with blue cheese and fresh cracked pepper and dipped a boneless chicken breast in eggwash then rolled it in the crumbs baked until crispy and OMG ...with roasted veggies it was UNBELIEVABLE!!! I have done pecans and parmesan in the past but this beets that three fold!!! So thanks!!!!! if you have not tried it and you are on the nut level ...well you are missing out!!!

Mix some ground nuts with some wasabi or cayenne. Then dip discs of chevre into olive oil and roll it into the nut mixture, coating it thoroughly. Put on a baking sheet and bake until the nuts are alittle toasty and the cheese is heated through. Serve it warm on a green salad with a vinegarette.
I used to do this with those wasabi peas, but found this was a good lower carb version.~Megs~
