  • How thin do you make flax crackers?

    I have recently got a coffee grinder and have been experimenting with flax.

    If I mix flax meal with water, spead it thin on a plate and microwave till dry I get a thin biscuit I can use with dips.

    This morning I tried half flax seeds and half porridge oats in the coffee grinder, and the results were also good.

    I get it down to about 1/8 inch thickness. The result is quite pleasent. Should I flatten the mix more, and if so how?

    It really depends on you. When I wrote the microwave flaxmeal wafer recipe, I said as thin as a dime (though, I know I had a metric conversion typo in there). Anyhow, a dime's thickness is about 1 millimeter. If you're having trouble spreading it that thin, add drop or two of water. This will increase the cooking time, but it will give you the thickness you want.

      I was doing it from memory, but now I have your website.

      2 or 3 mm thick is quite nice as a substitute for pitta bread.

      I will try the mixture with more water and make it thinner.

      What happens if you introduce some oil and roll it out many times like puff pastry?

        I haven't tried rolling it out. But if you do want something like puff pastry, then use butter and refrigerate between folds as you would with traditional puff pastry.
