  • Faux Potatoes

    Just had to announce that after 4 months, I finally bought some cauliflower and made 'mashed potatoes.' It wasn't as bad as I thought it would be, considering I've hated cauliflower since I was a toddler. I put a LOT of sour cream in them and smashed them until I could smash no more. It was nice having something different for a change!

    Yeah! I love these - add cream and cheese and some chives. So many variations as you can also add in chopped bacon or ham.

      I tried the faux mashed potatoes a few months ago...wasn't too bad. I could work on the texture a bit though, still not the same consitency of good 'ol mashed potatoes

        I thought I hated cauliflower. Occasionally I get cravings for mashed taters so I tried the faux potatoes. Oh my gosh were they yummy! I couldn't believe how much I liked them. My husband and daughter liked them too, surprisingly enough. This way of eating is a constant learning experience!

        In my opinion, the frozen cauliflower cooks down better, although they do get watery. I just try to drain them really good.

          I used frozen cauliflower too. And I liked it lumpy!

            Cauliflower absorbs alot of water, especially if it's boiled. I steam it, then let it sit to dry out even more or throw it in the oven for a bit to dry it out.

              I tried to make this and it took FOREVER!!! Is there a trick to it?

              I steamed them in the microwave (frozen cauliflower) and then put them in the blender with cream and garlic and butter. It took like 30 minutes to get it to actually get blended. Is there a better way to do it?

                knick, the cauli has to be well cooked---very tender. To the point when you insert the tip of a knife into it, there is no resistance at all. If you want a very smooth puree, puree the cauliflower, then add the other ingredients.

                I like mine on the chunky side, so it's more like a cauliflower "casserole", than a really smooth "mash".

                  If you roast your cauliflower instead of steaming or boiling, you get a sweeter flavor and less watery dish. You can also put it in a tea towel and squeeze out the extra moisture.

                    Although I don't eat it as fauxtatos cause I think it is nasty that way. I use my salad spinner to get the xcess water out of my cauliflower and broccoli after cooking--works great!

                      Last night I used some leftover cauliflower and put in 1 oz of cream cheese, a little butter and some HOT cheddar cheese (with hot peppers in it). I nuked it and then mashed it and it was yummy
