Cheese Sauce / Queso?

Hi, I was expermenting in the kitchen this week and came up with a cheese sauce by melting cheese into heavy cream. It tasted just like the kind I used to make using a white sauce.

My next question is, Does anyone have a good Queso recipe or one I can modify using the above? That seems to be my biggest weekness that makes me fall off the wagon every time.

I'm not sure what you mean by "queso", because "queso" is a general Spanish word for "cheese". Is this a specific cheese recipe you are looking for? If it is, please describe it.

Sorry, Spicy Cheese Dip. Chili's has one with meat but my favorate it is more like applebees version any ideas?

I usually just melt cheddar, colby, and monterey jack together and then add a spicy salsa to it. If you do it slowly over low heat it doesn't get clumpy or burn.

Oh...go to my blog and look at the last entry. It's called Homemade Cheese Spread. The recipe gives you something that approximates Velveeta or Cheez Whiz in texture, storage and meltability (but it doesn't use funky and fake ingredients!). Anyhow, you can add jalapenos or other chili peppers to the basic recipe (don't add the Dijon or the Worchestershire sauce...you might want to use a bit of grated onion or garlic instead.)

I did a little Net search and it looks like they add tomatoes, onion, cilantro adn jalapenos into their dip.
