  • Chicken Soup Question

    I am cooking a basic chicken soup, (chicken breast w/skin, carrots, celery,onion and parsley)
    Just curious: If I only eat the broth and meat, will I still be getting the carbs from the carrots or just the flavor?

    I personally think you'll be getting some of the carbs from the veggies you put into the soup, as they can leach out into the liquid. I would count the broth as 1 carb per cup--most broth recipes I've seen with nutritional counts on them count them as "trace" per cup, but count it as 1 to be on the safe side.

      Yes, the sugars from the vegetables do leak into the broth - but it's a fairly small amount, so just count a carrot-laden broth as a few extra carbs.

      Celery gives a nice flavor to broth, and other Induction friendly veggies and herbs can also be used instead of carrots.

          No problem.

          I have to get around to posting it, but I have a couple of vegetahle broth recipes that include the nutritional info...again, vegetable broth and they all contain about 1 gram of carb per 1 cup serving. So I imagine what does leach into the broth is very little....
