Just wanted some feedback on my mushroom soup recipe really...my daughter is also following Atkins but she's having problems eating enough veg...she really isn't all that keen on a lot of veg and the ones she does like she's kinda sick of now!!
She loves my homemade mushroom soup and I wondered if you all thought it'd be OK to use...It'd be an ideal way to get her food intake up as well as her veg!
This would make a batch which would yield approx 8 servings
16oz mushrooms
8 oz onion
2 tablespoons olive oil
6fl oz cream
chicken stock
I've punched all the ingredients into fitday and the total carbs comes to 41...as I said that would probably make 8 servings so would be around 6 carbs per serving...if she was having 1 serving per day that would be OK wouldn't it?
