We have a local Real Estate agent, who's monthly marketing junkmail we get in our mail every month, has a recipe card on the back. Usually they're not too Atkins friendly, but this month it is for a German salad called Gurkensalat, that sounds really good! Would be wonderful in the summer i think.
2 Large Cucumbers
2 tbsns cider vinegar
1 1/2 tbsns sugar (sub splenda or preferred sweetener)
1/2 - 1 tsp salt
1/4 tsp pepper
3/4 cup sour cream
2 tbsns minced fresh parsley
peel cucumbers and cut in to very thin slices (in the picture they are very very thin). mix together vinegar, sweetener, sald and pepper and pour over cucumbers. marinate about 20 minsutes to an hour but not more than that. drain off liquid, toss cucmbers with sourcream, then top with fresh parsley and serve.
I got this as the counts for the entire recipe (assumed using powdered splenda):
cals 441; fat 37; carbs 25; fibre 4; protein 9
