    Hi all

    I've just bought some flax seeds and was wondering if anyone could post their fave recipes using flax seeds?

    Thank you!


    26 yr 5'2 F
    Did Atkins on and off from Feb 2005 until April 2008. Fluctuated between 15 st 1/211lbs and 11 st 1/155lbs.
    On different weightloss programme from 28th May 2008 start weight 14 st 11/207lbs.
    Current weight 10st 3lbs/143lbs.
    Ultimate Goal Weight 9 st/126lbs.

    I haven't used the flax SEEDS, but I use flax meal occasionally.

    The seeds could be added to salads and yogurt and that type of thing. You might also be able to make "crusted" dishes from them (meat pan-fried after it's coated with a nut mixture) as well.

    If you want to make them into flax meal, you could probably grind them in a food processor or coffee grinder. I use flax meal to make wraps, muffins, and I mix flax and almond meal to make a little "cake" that I top with cream cheese icing and fresh fruit. Basically I've used recipes from Linda's lc site...her cinnamon flax muffins are SOOOOOOOOOOO good, but they gave me huge cravings (I think from all the SF syrup) so I can't eat them anymore.

      I like taking a tablespoon of flax seeds and simmering it in about 2 cups of water for about 30 minutes. Then I strain the seeds away. Chill the flax water and flavor it with lemon juice. It's very refreshing. It's similar to barley water. Or I strain the seeds from the simmering water , and steep tea in it.

        I just posted something yesterday
        I made flax buns for sandwhiches, and it turned out WONDERFUL!!!
        I even put up pics.
        And I didn't get any cravings

          The minute Muffin is really good too. I've had it with cream cheese on top. I hear it's really good with banana extract, and a couple walnuts. I also cut the flax meal down to 2 tbs. instead of 3, and it was alot lighter. Here's the recipe...
          Minute Muffin

          1 egg
          1 tbs. oil
          3 tbs. flaxmeal
          1 tbs. cinnamon
          2 splenda or Stevia
          1/4 tsp. baking powder
          Pinch of nutmeg

          Mix well with a fork in a microwave safe mug or small custard dish, and microwave 1-2 minutes.

            Flax crackers are easy to make.

            Mix equal amounts of ground flax/linseed with water (1 flat Tablespoon of each) and Leave a while to thicken up.
            Then put spoonfuls onto parchment paper and flatten them out
            Microwave till hard (I usually nuke them for 30 seconds at a time then check them to avoid burning them)

                  Me too! Tonight I made the Spanish "Rice" and Hamburger. It's really good!




                  SPANISH "RICE" AND HAMBURGER
                  1 pound ground beef
                  4 slices bacon, chopped
                  2 tablespoons onion, chopped, 1 3/4 ounces
                  1/4 cup green pepper, chopped, 1 1/4 ounces
                  1 pound fresh cauliflower, grated
                  8 ounce can tomato sauce
                  1 teaspoon salt
                  1/2 teaspoon pepper
                  1 teaspoon chili powder
                  1/8 teaspoon cumin
                  1/8 teaspoon garlic powder
                  4 ounces cheddar cheese, shredded

                  In a large skillet, brown hamburger, bacon, onion and green pepper; drain fat. Add all remaining ingredients except cheese. Mix well; cover and simmer about 15 minutes, until cauliflower is tender, stirring occasionally. Sprinkle cheese evenly over "rice". Cover skillet and turn to stove to lowest heat. Cook about 5 minutes, or until the cheese is melted.

                  Makes 6 servings
                  Can be frozen Per Serving: 263 Calories; 17g Fat; 20g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

                        LOL, sorry I didnt make my first post very clear. My flax seeds are cold pressed (ground) already so I'm guessing the bun recipe would be a good place to start!

                        Julie - How do you make wraps?

                        Elizellen - the crackers look a good idea, some cream cheese on top would go nicely!!
